Spinach Artichoke Dip Recipe

Most people would make this an appetizer, I made it a meal! Full of cream cheese, fresh spinach, artichoke hearts, mayonnaise, garlic, herbs and seasonings topped with more parmesan cheese. Thirty minutes in the oven and it’s ready to eat.

Spray an 8” oven safe dish with cooking oil.

Put spinach into a large bowl, cover and microwave on high for 2 minutes.

Let the spinach cool just until you can hold it. Squeeze small sections at a time to remove and discard the extra liquid then coarsely chop the spinach.

In a large bowl add the cream cheese, mayonnaise, garlic, basil, thyme, salt, black pepper and red pepper flakes.

Using the back of a spoon cream the ingredients until well blended.

Stir in the chopped spinach, chopped artichokes and 1/2 cup freshly grated Parmesan cheese.

Spread into the prepared baking dish.

Sprinkle the top with 1/4 cup freshly grated Parmesan cheese.

Bake in a preheated 350º oven for 30 minutes or until the top starts to get golden brown. Mine wasn’t browning so I put the dish under the broiler just until a hint of brown showed. Serve hot with bread, tortillas or crackers.

Toasted French toast slices or tortilla chips for dipping
