Easy Cheesy Boneless Mexican Chicken

This is so easy, and it tasted great too! Brown the seasoned chicken, add salsa and cover with cheese then bake. You will love all the flavors from the salsa and seasonings, I used medium heat salsa, but any will do.

Spray a 9” x 13” baking dish with oil. Preheat oven to 375º.

Measure out the salsa and cheese.

Combine the seasonings.

Place oil in a skillet over medium heat.

Pat the chicken dry with paper towel. Sprinkle seasonings over both sides of the chicken then place chicken into hot skillet.

Brown chicken on both sides. Cook until the thickest part of the chicken is 160º, watch it closely.

My chicken was very thick, so I cut it in half while cooking. Place the chicken into the baking dish.

Pour salsa on top.

Sprinkle cheese on top.

Bake uncovered for about 15 minutes (or 165º)  until the cheese melts then serve.

  • 1-2 Tbsp. oil

  • 4 boneless, skinless chicken breasts

  • 1/4 tsp. EACH of garlic powder, pepper and cumin

  • 1/2 tsp salt

  • 1 cup salsa

  • 1 cup shredded Mexican cheese (or cheddar cheese)

Directions

  1. Preheat oven to 375º.

  6. Pat the chicken with paper towel. Sprinkle seasonings over both sides of the chicken then place into the skillet.

  7. Brown chicken on both sides. Cook until the thickest part of the chicken is 160º, watch it closely. Place chicken into the prepared baking dish.

  8. Pour salsa on top.

  9. Sprinkle cheese on top.

  10. Bake uncovered until 165º (for about 15 minutes) or until the cheese melts then serve.

  1. This looks delicious, Diane. And I agree with your tip to cut thick pieces in half for better cooking. Browning the meat ahead of time unlocks a lot of flavours too. Yum! 😋

  2. I’ve commented in the past that your version of “easy” may not be the same as mine, but this looks easy! Hubby watched over my shoulder as i scrolled then said, “I would like that.” I responded, “This, I can do!” 😛
