Easy Cheesy Boneless Mexican Chicken

This is so easy, and it tasted great too! Brown the seasoned chicken, add salsa and cover with cheese then bake. You will love all the flavors from the salsa and seasonings, I used medium heat salsa, but any will do.

Spray a 9” x 13” baking dish with oil. Preheat oven to 375º.

Measure out the salsa and cheese.

Combine the seasonings.

Place oil in a skillet over medium heat.

Pat the chicken dry with paper towel. Sprinkle seasonings over both sides of the chicken then place chicken into hot skillet.

Brown chicken on both sides. Cook until the thickest part of the chicken is 160º, watch it closely.

My chicken was very thick, so I cut it in half while cooking. Place the chicken into the baking dish.

Pour salsa on top.

Sprinkle cheese on top.

Bake uncovered for about 15 minutes (or 165º) until the cheese melts then serve.

looks good
Thank you!
🙂🙂
A fiesta in every bite, perhaps inspired by your trip to San Antonio, TX!
Haha Maybe it was! There was a lot of inspiration there.
Looking good
Thank you Derrick!
yum and easy, too!
It sure is easy, my favorite kind of meal. Lol Thank you Beth!
This look so delicious!
Thank you Paul!
This looks delicious, Diane. And I agree with your tip to cut thick pieces in half for better cooking. Browning the meat ahead of time unlocks a lot of flavours too. Yum! 😋
Thank you Ab! I don’t usually eat white meat but with the salsa (I love salsa) it was moist and flavorful.
This looks so delicious Diane – some spicy and cheesy goodness!
I don’t care for white meat but with all the flavor this recipe has, it was delicious. Thank you Linda!
I’ve commented in the past that your version of “easy” may not be the same as mine, but this looks easy! Hubby watched over my shoulder as i scrolled then said, “I would like that.” I responded, “This, I can do!” 😛
Let me know how the hubby likes it. If he likes spicy, buy hot or medium salsa. Otherwise stick to mild.
I have commented on here in the past that sometimes your definition of easy and mine don’t correspond. However, this does sound easy enough even for me! Hubby watched over my shoulder as I scrolled and said, “I would like that.” I said, “Can do!” 🙂
If you can cook chicken in a skillet, that’s the hardest part. You got this one!
Yum! This looks soooo gooood!
Thank you Nancy!
How easy is that, and it looks delicious. I will definitely have to give this a try.
This is so easy. I don’t care for white meat but with all the flavor this has, I love it.
I bought some boneless chicken breast yesterday, so will give it a try.
Enjoy!!! You will love how easy it is to prepare.
I’ll keep you posted how it turns out.
Thank you!
It was delicious. I really enjoyed it and it was just as good on day two.
I am glad you liked it Carla and I appreciate you letting me know. Have a great day!
