Kielbasa, Potato and Vegetable Casserole

Try this delicious Kielbasa, Potato, and Vegetable Casserole recipe that’s easy to prepare and packed with flavor using all your favorite spices and herbs. Perfect for your family meals!

Spray a 9”x 13” casserole dish with oil.

Slice the Kielbasa. Peel the onions then cut into larger than normal pieces.

Place the thawed, frozen vegetables on the bottom of the dish.

Peel and cut potatoes into 1” pieces then par boil for 10 minutes and drain.

Place the potatoes on top of the vegetables. Add whatever seasoning and herbs your family loves.

Add the Kielbasa and onion on top.

Add pats of butter to the top, I used an entire stick of butter.

Seal tightly with foil. Bake in a preheated 375º oven for 30 minutes.

Remove from the oven and carefully remove the foil. Place the casserole back in the oven uncovered for 10-15 more minutes.

Remove from the oven and serve.

Ingredients
- 14 oz Kielbasa
- 4 medium potatoes
- 2 medium onions
- 14 oz bag of frozen mixed vegetables, thawed
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp each of your favorite combination of seasonings such as oregano, garlic powder, creole seasoning or Italian seasoning for example.
- 8 Tbsp butter, one stick
Directions
- Preheat oven to 375 degrees. Spray a 9”x 13” casserole dish with oil.
- Place the thawed vegetables on the bottom of the dish.
- Peel and cut potatoes into 1” pieces then par boil for 10 minutes and drain.
- Place the potatoes on top of the vegetables. Add whatever seasoning your family loves.
- Slice the Kielbasa. Peel the onions and cut in larger than normal pieces.
- Place pats of butter evenly on top then seal the casserole dish with foil. Bake for 30 minutes.
- Remove from the oven and carefully remove the foil. Place the casserole back in the oven uncovered for 10-15 more minutes then serve.

It’s a rich kind of sausage that my husband loves. It’s already cooked so it can go in most any recipe.

I always have a hankering for kielbasa or smoked sausage, either one, every time you have a recipe that features it. I think I could modify this for the crockpot, kinda sorta.
Absolutely just add a little broth and your favorite seasonings.
I was at Meijer and forgot again to buy some – why do I never think of it ’til I see a recipe on your site. I no longer have seasonings except the ones in the decorative spice rack which are likely rancid decades ago. I bought it for my mom as she always wanted one and she didn’t use it, just kept it for show. No broth here either … I was just going to cut it up and throw it in the crockpot with all the vegetables and noodles because it’s already cooked.

This looks like one hearty meal! And how ironic, I’m making almost the same dish tonight! Sausage and potatoes – mixed with tomatoes, onions, and beef stock and then it simmers on the stove for about an hour. The sauce is wonderfully thick and it’s a perfect dish for a cold winter’s evening.
