Easy Baked Hamburger Casserole

It doesn’t get any easier than this! Everything cooks in one casserole dish or small roaster in the oven with very little prep work and plenty of flavor.

Spray a 4 quart casserole dish or small roaster with cooking oil.

Place the prepared potato slices on the bottom without overlapping.

Spread the ground beef loosely on top and then pepper to taste.

Pour the noodle soup on top, spreading out the noodles. Add the mushrooms spreading them out evenly.

Top with the onions and celery.

Spread the cream of mushroom soup on top.

Spread the tomato soup on top. Cover and bake in a preheated 300º oven for 2 & 1/2 hours or until the potatoes can be pierced with a fork, then serve.

Ingredients
- 3 large potatoes, peeled and sliced 1/2” thick
- 1# ground beef, raw (90% lean and 10% fat)
- 1/2 tsp pepper or to taste
- 1 large celery stalk (1/2 cup) sliced
- 1 small onion (1/2 cup) diced
- 1 can chicken noodle soup, 10.75 oz.
- 1 – 4 oz. can sliced mushrooms, drained
- 1 can cream of mushroom soup, 10.75 oz.
- 1 can cream of tomato soup, 10.75 oz.
Directions
- Preheat oven to 300º.
- Spray a 4 quart casserole dish or small roaster with cooking oil.
- Place the prepared potato slices on the bottom without overlapping.
- Spread the ground beef loosely on top and then pepper to taste.
- Pour the noodle soup on top, spreading out the noodles. Add the mushrooms spreading them out evenly.
- Top with the onions and celery.
- Spread the cream of mushroom soup on top.
- Spread the tomato soup on top.
- Cover with a lid and bake for 2½ hours or until the potatoes can be pierced with a fork, then serve.

I haven’t ever layered soups before, but it sounds good!
I was surprised how easily the soups spread on top of each other. You could mix the soups together and then spread it out but why dirty another dish. By the time it was done baking, everything came together as a delicious sauce. All the layers just combined by baking. I love experimenting with recipes like this.

I like how the ground beef is added raw, not cooked ahead of time.
This was the first time I have added the ground beef raw. It was completely cooked when it was done not dry like when it gets cooked first. Win-win!
