Skillet Ground Beef, Rice, Corn & Peppers

This is one of our favorite skillet meals that I use our garden poblano and jalapeño peppers with. I freeze all the extra peppers and we have this meal all year long. In addition to the ground beef, rice, tomatoes and corn, you can use poblano peppers, jalapeño peppers or whatever your favorite pepper.

I love these one pot dishes (especially if you can add rice as well). I’ve never heard of poblano peppers – will have to look for that – otherwise it will have to be regular peppers. But I’m definitely going to try this recipe, it looks like a delicious meal.
Thank you Corna, it is one meal I make a lot of. Poblanos are a cross between green peppers and jalapeño peppers. We only discovered them about 4 years ago and we loved them so much that we grow them in the garden every year now. Use any pepper you want, even green pepper, but the extra heat really makes this good. I even use jalapeño if I want it spicier. Use the leftovers as a wrap if you want too.
Thanks Diane, I think Berto will like the jalapeño peppers. Interestingly, our Dish of the Week tomorrow is also a one-pot dish … not with rice, but orzo pasta.

Total coincidence, I have green peppers and ground beef in fridge for Thursdays dinner. I’ll have to give this a try. I just need to get corn. 😋
I don’t repeat a lot of meals but this one I make every few weeks. It took me a while to get the flavor where I wanted and the corn was the key! This would make a great wrap too. I’m going to try it that way with the leftovers for lunch today.

Thank you Betty, we never eat it all at one meal so I eat it the next day for lunch and it is still delicious. Somebody suggested putting it in a tortilla which I thought was a great idea for the next day too.

Me too! We get so many from the garden and we don’t eat them fast enough. So I wash them, chop them into small pieces and freeze them in one meal packs. What’s crazy is that by freezing them I can skip the baking process of the skin. I put them in with the ground beef when I am cooking it and they turn out perfect.

Such a versatile recipe, and we love peppers except the really hot ones (e.g. habaňo, ghost).

Looks great! I discovered poblano peppers this summer just gone. I seared them whole on the bbq griddle and we ate them slightly salted, as a beer snack.

Yes we do Linda! I disagree with them, peanut butter and jelly will always be at the top of my list. One of these days I am going to put one in the air fryer!
I think peanut butter and jelly is number one too – no mess or fuss. You have to prepare a grilled cheese, not just slap some peanut butter and jelly onto some bread. You should try it and maybe your ears are burning because another blogger wrote about using her crockpot and thinking about an air fryer. I told her how much you love yours and often post recipes.
Good advice Ab! My husband even get’s it out to make sausage, brats etc. This is the man that said he doesn’t want to clean it, but now that he knows how perfectly the air fryer cooks them he does it every time he makes sausage of any kind.

I was surprised peanut butter and jelly wasn’t higher up on the list. I wasn’t surprised that cutting the sandwich into a triangle was the favorite.
Surely they didn’t give peanut butter and jelly bad marks for being unhealthy, because peanut butter is healthy and good for you. The jelly can’t be unhealthy either. That is funny about the triangle … yes cutting it fancy to have appeal. I didn’t care for crusts when I was little, but I didn’t get to rebel at all. Mom would say “if you want curly hair like Mommy you have to eat your crusts” – my hair was stick straight and still is, so she was not telling me the truth! 🙂
