Skillet Ground Beef, Rice, Corn & Peppers

This is one of our favorite skillet meals that I use our garden poblano and jalapeño peppers with. I freeze all the extra peppers and we have this meal all year long. In addition to the ground beef, rice, tomatoes and corn, you can use poblano peppers, jalapeño peppers or whatever your favorite pepper.

  1. I love these one pot dishes (especially if you can add rice as well). I’ve never heard of poblano peppers – will have to look for that – otherwise it will have to be regular peppers. But I’m definitely going to try this recipe, it looks like a delicious meal.

    • Thank you Corna, it is one meal I make a lot of. Poblanos are a cross between green peppers and jalapeño peppers. We only discovered them about 4 years ago and we loved them so much that we grow them in the garden every year now. Use any pepper you want, even green pepper, but the extra heat really makes this good. I even use jalapeño if I want it spicier. Use the leftovers as a wrap if you want too.

  3. Total coincidence, I have green peppers and ground beef in fridge for Thursdays dinner. I’ll have to give this a try. I just need to get corn. 😋

    • I don’t repeat a lot of meals but this one I make every few weeks. It took me a while to get the flavor where I wanted and the corn was the key! This would make a great wrap too. I’m going to try it that way with the leftovers for lunch today.

    • Thank you Betty, we never eat it all at one meal so I eat it the next day for lunch and it is still delicious. Somebody suggested putting it in a tortilla which I thought was a great idea for the next day too.

  5. Looks great! I discovered poblano peppers this summer just gone. I seared them whole on the bbq griddle and we ate them slightly salted, as a beer snack.

  6. This is similar to the Beef Skillet Fiesta recipe my mother used to make. I hadn’t thought of it in years! Thanks for the reminder. Brought back good memories.
