Butter Fried Potatoes With Onions

This is one of my favorite ways to make potatoes. Add bacon and it gets even better, but then bacon makes everything better. Throw in green or red pepper or even cheese, the possibilities are endless. I am posting this for the people that are new to cooking and to remind seasoned cooks how versatile this recipe can be. We make this recipe all the time as it is so easy, delicious and a great side dish.

Yum! Reminds me of my Mom’s wonderful “home fries”, made w/oil for frying thinly sliced potato slices. They all stuck together, and were especially loved by my niece Jessie, who could easily polish off a plateful.

I love home fries, and I always put onions and sometimes pepper in and bacon grease or butter really adds to it ! We have been to so many breakfast restaurants and their home fries are kinda blah. We prefer the ones we make at home, like yours !
I don’t like anything in restaurants anymore compared to our home cooked food. A lot has to do with making it our way but I think the restaurant can’t get help and hire cooks that don’t know what they are doing, with the exception of fine dining restaurants.
Great reminder as to how special potatoes can be! And since, at the moment, I am without an oven, even better cooked on the burner!

I haven’t made these in a while, but I do love them. Adding crumbled bacon sounds good. I don’t peel my potatoes–supposed to be healthier and honestly I can’t tell the difference. Thanks for putting these back on my radar.

Back when my father was still around we used to have a “country breakfast” every Sunday morning and that always included fried potatoes, eggs and some type of meat (usually sausage links). Brings back some tasty memories.

My daughter loves these potatoes and serves them for breakfast in a bowl with an egg on top. She puts onions, bacon and peppers in them. Now I want to make these for breakfast, Diane.
That’s so funny because I have to have a sunny side up egg with mine to mix in with them too. However, I would still eat them if I didn’t have the egg! Lol

Your dish looks good, but I don’t eat much butter in my food.
You can substitute any oil, bacon grease etc., butter just gives it a delicious flavor that we love.
