Easiest Chicken or Turkey Brunswick Stew

My Brunswick Stew is thick and a great way to use up canned vegetables with leftover chicken or turkey. It doesn’t get any easier than this to make stew and it tasted so good!

In a large pot add the vegetables, making sure they are completely drained.

Add the tomato sauce, crushed tomatoes, Rotel, BBQ sauce (or ketchup), chicken (or turkey), garlic powder, salt and pepper.

Add the chicken broth and stir to combine. Bring to a boil then reduce heat to a simmer. Simmer, uncovered, for 10 minutes then serve.

Ingredients
- 15.2 oz. can corn, drained
- 14.5 oz. can green beans, drained
- 14-5 oz can carrots, drained
- 2 – 15 oz. cans diced white potatoes, drained
- 15 oz. kidney beans, drained
- 8 oz. tomato sauce
- 15 oz. crushed tomatoes
- salt to taste
- pepper to taste
- 1/4 tsp. garlic powder
- 10 oz. Rotel with tomatoes & green chilies
- 3/4 cup BBQ sauce (or ketchup)
- 2 – 14.5 oz. cans chicken broth
- 4 cups shredded chicken or turkey meat
Directions
- In a large pot add the vegetables making sure they are completely drained.

Love one pot wonders like this. Especially when it reduces waste. In this age of meeting worldwide energy needs.

I’d try this in the crockpot with canned chicken – it looks good Diane.
That would work but only long enough to heat it up.
OK, well so much for that idea … this looks very good; it reminds me of the cowboy dinner, tasty and hearty.
The BBQ sauce was a surprise ingredient for me. It sounds good.
I really enjoyed it with BBQ sauce, my husband didn’t. I researched the stew and it appeared in many recipes. When I make it again I will add ketchup, just for him. The good thing was I had multiple delicious lunches all to myself. Lol Thank you Linda!
I think I’m with your hubby on this one. I’m not BBQ sauce guy, definitely the ketchup or even a thick marinara. Otherwise look for some stranger at your door in a Pirate’s hat with a spoon. 🙂
