Cowboy Dinner Topped With Breadsticks

Cowboy Dinner is made with ground beef, cheese, beans, salsa, vegetables and topped with breadsticks for a hearty meal just like the cowboys like.

Dice the celery, green pepper
and onion small, then set aside.

In a large skillet over medium heat,
cook the ground beef until
no pink remains.

Add the celery, green pepper, onion and
cook until the vegetables are tender.

Add the rest of the ingredients, except
for the bread stick dough, then stir
until the cheese melts.

Spray a 3 quart baking
dish with cooking oil.

Pour the ground beef mixture
into the baking dish.

Gently remove each breadstick. Twist the
dough and place on top of the ground
beef mixture, making sure to cover
the ground beef mixture completely.

Bake, uncovered, in a preheated 350º
oven for 20 minutes or until hot, bubbly
and the bread sticks are a golden brown.

Ingredients
- 1# ground beef
- 2 stalks celery, rinsed
- 1/2 green pepper, rinsed
- 1 small onion
- 15.25 can or frozen corn
- 8 oz. canned kidney beans
- 1½ cups salsa, your favorite
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 cup shredded cheddar cheese
- 11 oz. tube breadstick dough
Directions
- Preheat oven to 350º.
- Dice the celery, green pepper and onion into small pieces.
- In a skillet over medium heat, cook the ground beef until no pink remains.
- Add the diced celery, green pepper and onion. Cook with the ground beef until tender.
- Add all the rest of the ingredients except for the breadstick dough. Stir until cheese melts.
- Spray a 3 quart baking dish with cooking oil.
- Add the ground beef ingredients to the baking dish.
- Open the breadsticks tube and gently separate each breadstick.
- Twist each breadstick then lay them on top of the ingredients in the dish, making sure to cover it completely.
- Bake for 20 minutes or until hot and bubbly and breadsticks are a golden brown on top then serve.

Diane – I love hearty food, especially with the colder weather settling in. I know when I use the stove/oven again (hopefully in this decade), this might be one of my first meals. 🙂
