Skillet Chicken Ramen Stir Fry

This is one of the easiest meals you can make using chicken, stir fry vegetables, Ramen noodles and a delicious sauce all cooked in one skillet on top of the stove. It’s hard to believe something this easy can taste so good!

In a large skillet over medium heat add the chicken, water, one packet of Ramen seasoning (discard other packet or use another time), stir fry sauce and vegetables then bring to a boil. Reduce heat to medium low. Cover and cook for 5 minutes, stirring occasionally.

Break up the Ramen Noodles and add to the skillet. Cover and cook for 5-6 minutes, stirring occasionally, until noodles are tender. Remove the lid and cook another 1-2 minutes stirring frequently but gently.

Then serve.

Ingredients
- 1 large cooked rotisserie breast, cut into small bite size cubes
- 2½ cups water
- 2 – (3 oz. packages) chicken flavor Ramen Noodles with seasoning packets
- 1/2 cup stir fry sauce
- 3 cups frozen stir fry vegetables

Sounds yummy. I’m hungry! So is Stir Fry Sauce just a generic sauce that has that name? I’ve not used that.

My recipe is for something called “Oven Porcupines”. I haven’t made these in years but was cleaning out my recipe box the other day and came across the card so here’s the recipe:
INGREDIENTS: 1 lb ground beef, 1/2 cup uncooked rice, 1/2 cup water, 1/3 cup chopped onion, 1 teaspoon salt, 1/2 teaspoon celery salt, 1/8 teaspoon garlic powder 1/8 teaspoon pepper 1 15 oz can tomato sauce, 1 cup water, 2 teaspoons Worcestershire sauce.
DIRECTIONS: Heat over to 350º. Mix meat, rice, 1/2 cup water, the onion, salts, garlic powder and pepper. Shape mixture by rounded tablespoonfuls into balls. Place meatballs into 9″x13″ ungreased baking dish. Stir together remaining ingredients and pour over meatballs. Cover with aluminum foil and bake 1 hour.
These can be served with a salad, veggie, potato or pasta as a side dish.
Does the rice cook completely Nancy? I always wanted to make these but I didn’t think the rice would get done enough. I figured I could cook the rice and then add it. What’s your thought on this? Yes, Diane, the rice cooks completely. I wouldn’t precook the rice; it will get too mushy.

The reason they are so popular, other than taste , is how cheap they are to buy. I’m not crazy about them just from the package but with things added, like this recipe, I love them.
I have to buy some and expand my horizons. I never think about it when I’m at the store.
I actually had this for dinner again tonight. Lol I broke down and made Terry a Cowboy meal that has green pepper in it. That was his one time a year I make him something with green pepper and it is all his! Lol
