Creamy Italian Tortellini Soup

A hearty soup with tortellini, sausage, carrots, tomatoes, spinach, seasonings and cream which makes a delicious broth and even better soup. I told my husband I hoped he didn’t like this so I could have it all, but that didn’t happen.

In a large skillet over medium heat, cook
the sausage until thoroughly cooked and
crumbly. Remove the sausage from the
skillet (keeping the grease in the skillet).
Place the sausage on a plate or
in a bowl and set aside.

Add the carrots and onion to the skillet
with the leftover grease. If there isn’t
enough grease to cook the vegetables,
add 1 Tbsp. of olive oil. Stir frequently
and cook until tender. Add the
garlic and cook another 1-2 minutes.

Add the cooked sausage, beef broth,
tomatoes, tomato sauce, basil, oregano,
parsley, and spinach. Bring to a boil,
turn to a simmer and simmer
for 20 minutes covered.

Add the tortellini, cover and
simmer for 7 more minutes.

Stir in the heavy cream then serve
topped with cheese if you wish.

Ingredients
- 1# hot Italian sausage (mild can be used instead)
- 20 oz. cheese tortellini, uncooked
- 1 cup peeled & diced carrots
- 2 cloves garlic, diced
- 1 medium onion, diced
- 7½ cups beef broth
- 1 – 14.5 oz. can diced tomatoes
- 8 oz. tomato sauce
- 1/2 Tbsp. packed fresh basil (or 1/2 tsp. dried)
- 1 tsp. packed fresh oregano (or 1/4 tsp. dried)
- 3 Tbsp. packed freshly chopped parsley (or 1 Tbsp. dried)
- 2 cups fresh spinach
- 1 cup heavy cream
- grated parmesan cheese, for garnish (optional)
Directions
- In a large skillet over medium heat, cook the sausage until thoroughly cooked and crumbly. Remove the sausage with a slotted spoon to a plate or bowl, keeping the grease in the skillet.
- Add the carrots and onion to the skillet, cooking until tender. If there isn’t enough grease to cook them, add 1 Tbsp. of olive oil. Once tender add the garlic and cook another 1-2 minutes.
- Return the sausage to the skillet and add the beef broth, tomatoes, tomato sauce, basil, oregano, parsley and spinach. Bring to a boil, turn to a simmer and cover, simmer for 20 minutes.
- Add the tortellini, cover and simmer for 7 minutes.
- Remove from the heat and stir in the cream.
- Ladle into serving bowls and top with cheese, optional.

Looks good. I am now however vegetarian so can only admire from afar. LOL
How did I not know that? I don’t know anything about what you can or cannot eat, however, could you adapt this by using something other than the sausage?
I am learning a lot about adaption and this is more about some issues, believe me, However, it is helping so yes I will think about different ways. I still love following you though ❤
