Lemon & Cream Cheese Filled Pastry

What is it about puff pastry that is so good? Add some cream cheese, lemon curd then top it off with a lemon glaze and it is even more amazing! Can’t find lemon curd? That’s OK use fruit pie filling instead.

I used a revise with tomato, spinach and some kind of cheese mixture, making separate rectangles.

Just looked up the recipe. Cut the pastry sheet into quarters. Pile grated Mozzarella in middle (I used asiago), put some basil on top, then sliced tomato. Pick up two corners and place over the filling, so filling sticks out the corners exposed. Egg wash over the top and bake. It’s good for breakfast or light lunch or dinner. 🙂

My mom used to make something similar with raspberry jam and icing sugar – she would have liked this as she loved lemon. After we moved to the States, she would stock up on Shirriff lemon pudding/pie filler every time we went to visit my grandmother in Toronto as lemon meringue pies were a favorite dessert for her.
I haven’t had lemon meringue pie in years, and I have never made it either. I bet your grandmother looked forward to those visits!
Yes, she did and we had a “grocery exchange” – my mom loved some Canadian brands, like Red Rose mixed pickles and that lemon pie filler, plus Coffee Crisp and Aero chocolate bars. We’d bring groceries from the States that was were much cheaper than in Canada – cigarettes for the neighbors who did nice things for my grandmother. My mom would fret if her meringue was less than a perfect beige color. 🙂
Love lemon … but are always a bit hesitant when it comes to puff pastry. I’ll show this recipe to Berto – he might be up for the challenge 😉.
