Overnight Cheesy Breakfast Casserole

This casserole is full of sausage, egg, cheese and tater tots. The tater tots end up tasting like hash browns as they completely break apart giving this casserole the best flavor ever. I could eat this for any meal!
My cousin came to visit and to watch my granddaughters last basketball game at school. The game was at 11:00 am (and they won) so I had no time to prepare lunch when we got back to my house. I decided to make this casserole because it can be made ahead of time, allowing me to have it ready to bake, dishes already cleaned up and I was able to spend more time visiting with my cousin.

Spray a 9” x 13” baking
dish with cooking oil.

Add the sausage and onion to a large
skillet over medium heat cooking until
no pink remains and the onion is
translucent, then remove the
skillet from the heat.

Place the mini tater tots on the bottom
of the prepared casserole dish, making
sure you cover the bottom completely.

Spread the sausage and onions over
the tater tots. You could even add
diced green and red peppers now.

In a bowl, whisk the eggs,
milk and half & half.

Add the seasoned salt and pepper
to the milk mixture and whisk.

Sprinkle the cheese evenly over the
sausage and pour the milk
mixture over the top.

Cover with foil and refrigerate overnight.

Remove the casserole from the
refrigerator, 15 minutes before
baking, keeping it covered. Bake,
covered, in a preheated 350º oven
for 25 minutes then remove the foil.

Bake an additional 20 more
minutes or until hot and bubbly.

Remove from the oven, let sit
for 5 minutes then serve.

This looks good, Diane. I didn’t know about mini tator tots. I’ll look for them the next time I’m at the supermarket.
You can use regular ones but you will only need about 60 (one bag). The grocery store was out of the regular ones so that’s why I used the mini. I really liked using the mini though.
Looks delicious! You could easily make this vegetarian with many of the new sausage stand-ins out there.
Most definitely Dorothy, it is a very versatile recipe not to mention delicious. Thank you❤️
I had no idea what “tater tots” are … but then I googled it (did you know that “tater” is short for potato – ah well, you probably did 😁). This looks like a wonderful dish and it’s always a bonus to be able to prepare this before the time!
And well done to your granddaughters basketball team for winning their match 👏.
You could even put hash browns on the the bottom instead of tater tots. Thank you❤️
Sounds easy and yummy!
It really was Katelon, thank you! ❤️
The other day, I returned here and printed out your orange glaze chicken thighs. My better-half and I can not wait to have them again!! I highly recommend it to any one!!
After reading this casserole, I just might be back for this one too.
You will love this, I know we all did. Thank you GP!
You know, the Super Bowl is coming. This is a great way to open up the day.
It sure would be! Thank you!
That is a power breakfast and a yummy one at that. Definitely a great way to energize your start to the day!
The tater tots completely made this casserole. Thank you Ab!

Truth be told—I do too, Diane. 🙂
Looks delicious
Thank you we devoured the entire casserole!
I am a great fan of make ahead recipes and this also looks like a kid pleaser. Thanks for the share.
You’re welcome!
Sooooooo good!!!!! 🙏🏼🕊🙌🙌🙌🙌
Thank you Tammy! ❤️
Most welcome D!!!
Too big a breakfast for me. Maybe later in the day!
I agree, the only thing I have for breakfast is coffee! Lol That is why we had this for a late lunch, after the basketball game.
Oh, delicious-looking breakfast and I would eat it anytime, hot or cold and the cheese made it all the better!
Thank you Linda, I never got a chance to try it cold because they ate it all!
That means you are a good cook!
They eat anything! 🤣
Ha ha – they even like Brussels Sprouts. When I was a kid my father liked Brussels Sprouts and he liked chicken livers. I never liked either, but my mother had rules … you eat what is on your plate or no dessert. I’d drown the chicken livers in ketchup. I don’t remember if I put ketchup on the Brussels Sprouts. 🙂
I fed the food I didn’t like to the dog under the table😂
There’s an idea – dogs never stuck around long enough in our house so I could do that. My grandparents had a parakeet and they always had a ham in the fridge to make sandwiches mostly. So every time they had ham, they fed a piece to the bird!
You are the perfect grandma…food waiting after the game!
I was being selfish and making it easier on me🤣 Thank you💕
Thank you for sharing❤️
Yum, I love these casseroles for when the grandkids spend the night. Pinning this one.
Me too Carla, I would much rather spend time with them and not preparing food. Thank you!
