Overnight Cheesy Breakfast Casserole

This casserole is full of sausage, egg, cheese and tater tots. The tater tots end up tasting like hash browns as they completely break apart giving this casserole the best flavor ever. I could eat this for any meal!
My cousin came to visit and to watch my granddaughters last basketball game at school. The game was at 11:00 am (and they won) so I had no time to prepare lunch when we got back to my house. I decided to make this casserole because it can be made ahead of time, allowing me to have it ready to bake, dishes already cleaned up and I was able to spend more time visiting with my cousin.

Spray a 9” x 13” baking
dish with cooking oil.

Add the sausage and onion to a large
skillet over medium heat cooking until
no pink remains and the onion is
translucent, then remove the
skillet from the heat.

Place the mini tater tots on the bottom
of the prepared casserole dish, making
sure you cover the bottom completely.

Spread the sausage and onions over
the tater tots. You could even add
diced green and red peppers now.

In a bowl, whisk the eggs,
milk and half & half.

Add the seasoned salt and pepper
to the milk mixture and whisk.

Sprinkle the cheese evenly over the
sausage and pour the milk
mixture over the top.

Cover with foil and refrigerate overnight.

Remove the casserole from the
refrigerator, 15 minutes before
baking, keeping it covered. Bake,
covered, in a preheated 350º oven
for 25 minutes then remove the foil.

Bake an additional 20 more
minutes or until hot and bubbly.

Remove from the oven, let sit
for 5 minutes then serve.

Ingredients
- 1# bulk breakfast sausage
- 1 medium onion, chopped
- 1 large bag of frozen mini tater tots (about 112)
- 4 large eggs
- 1 cup milk
- 1/2 cup half and half
- 1/2 tsp. seasoned salt (I used Lawry’s)
- 1/4 tsp. pepper
- 2 cups shredded cheddar cheese, or your favorite
- 1 cup diced red & green pepper, optional
Directions
- Spray a 9″ x 13″ baking dish with cooking oil.
- In a large skillet over medium heat, cook the sausage and onion until no pink remains, remove skillet from the heat.
- Place the tater tots on the bottom of the baking dish covering the bottom completely.
- Spread the sausage evenly on top of the tater tots. If you want red and green peppers, add them now.
- In a bowl, whisk the eggs, milk and half & half. Add the seasoned salt and pepper then whisk again.
- Sprinkle the shredded cheese evenly over the sausage.
- Pour the milk mixture over the cheese.
- Cover with foil and refrigerate overnight.
- Remove the casserole from the refrigerator and let sit on the counter for 15 minutes, keeping it covered.
- Preheat oven to 350 degrees.
- Bake casserole, covered, for 25 minutes. Remove the foil and bake another 20 minutes or until hot and bubbly.
- Remove from the oven and let sit for 5 minutes, cut and serve.

You can use regular ones but you will only need about 60 (one bag). The grocery store was out of the regular ones so that’s why I used the mini. I really liked using the mini though.

I had no idea what “tater tots” are … but then I googled it (did you know that “tater” is short for potato – ah well, you probably did 😁). This looks like a wonderful dish and it’s always a bonus to be able to prepare this before the time!

Ha ha – they even like Brussels Sprouts. When I was a kid my father liked Brussels Sprouts and he liked chicken livers. I never liked either, but my mother had rules … you eat what is on your plate or no dessert. I’d drown the chicken livers in ketchup. I don’t remember if I put ketchup on the Brussels Sprouts. 🙂

There’s an idea – dogs never stuck around long enough in our house so I could do that. My grandparents had a parakeet and they always had a ham in the fridge to make sandwiches mostly. So every time they had ham, they fed a piece to the bird!
