We love chicken pot pie. But I never tried to make one from scratch. Now that I know I have a reliable, delicious recipe (your recipes always are!), I am going to try it. Perfect for dinner on a cold, winter day!
You can make it with the Bisquick topping or make up a box of Stove Top Stuffing and use it for the topping, both are so good.
My husband ordered chicken pot pie in a restaurant recently. He said the flavor was good, but the filling was too runny and there were not enough chunks of anything. It sounds like they were making a favorite standby as cheap as they could, but the price wasn’t cheap. I think he would enjoy your version.
Leftover chicken or turkey make this pretty inexpensive because it makes a 9″ x 13″ dish full. I love to eat this cold the next day. You will just have to make it for him Linda!
Thanks Diane. I kid you not, I have a half bag of mixed vegetables in my freezer I’ve been wanting to use up for the longest time but T stopped eating them cuz he’s so damn fussy. I’m gonna use them towards this recipe. I don’t have Bisquick but can improvise with something else. All other ingredients I have. Yum yum! 😋

That’s so funny you say that, my husband saw my post and asked why I didn’t post turkey leftovers are great too. I guess I wasn’t thinking Thanksgiving yet. lol
I make it all winter and use the recipe from an old Real Simple cooking periodical. I cheat and use refrigerator pie crust.
There’s nothing wrong with that, there’s times I cheat at recipes too. All that matters is that you love it.
