Italian Pasta Salad

I made this Italian Pasta Salad in remembrance of my late Aunt Lynda. For my birthday, in 2019, she paid for my cousin and me to attend a class with her to learn how to make Homemade Cheese Ravioli. The class was at a store in which I also purchased some items, one of them being this Italian Pasta. I have looked at this dry pasta in my cupboard for over two years as it always made me smile and think of my Aunt Lynda. I finally decided to cook the pasta and make this delicious pasta salad.


This is the pasta I purchased at the cooking class.
I love all the colors but I wish the colors
didn’t fade when you boil them.

In a large pot boil any type of pasta you want,
cooking according to the package directions.

While the pasta cooks cut your
other ingredients into small pieces.

Drain the pasta and put it into a bowl,
cover and refrigerate until cool.

In a large bowl combine the pasta and other ingredients.

Pour Italian salad dressing over the pasta and gently
toss until all of the ingredients are coated
with the salad dressing then serve cold.

That pasta looks so beautiful in the package! You’re right that it’s too bad you lost some of the colour during the cooking process but it still looks very tasty to me!

Being Italian myself and coming from a family that made pasta for a living, this recipe is a winner. So much you can do with macaroni. And best of all, it’s all good!

Yes and you can add any type of block cheese cut into bite size pieces.

Ah, such a wonderful memory of your aunt 💌. I like the colourful pasta – not sure whether I will find something like this in our stores (maybe at one of the speciality pasta deli’s). It’s almost summer here and I can’t wait to prepare lots of wonderful salads!!

Thank you she was such a special lady. When we left the pasta class she hugged me and I had to hold her up. I told my cousin something was wrong, she had a stroke. I know you will enjoy each and every salad!
