German Potato Salad

German Potato Salad has been a favorite of mine since I was a kid. It is made with sliced potatoes, bacon, green onions, a sweet & sour liquid and seasonings. Then it is baked in the oven and served hot.

Peel potatoes and slice about 1/4” thick.

In a small saucepan combine the vinegar and sugar.

Heat over medium heat just until the sugar

dissolves then remove from the heat.

Spray a 3 quart casserole dish with cooking oil.

Add the sliced potatoes, bacon,

green onions, salt and pepper.

Toss well.

Pour the liquid mixture over the potatoes and toss,

coating all of the potatoes with the liquid.

Cover with a lid and bake in a preheated 350 degree

oven for about one hour or until the potatoes are

tender, gently toss after 30 minutes of baking.

Ingredients

  • 4 medium potatoes, peeled and sliced 1/4” thick
  • 4 green onions, sliced
  • 1 cup bacon, cooked and crumbled 
  • 1/3 cup vinegar, white or cider
  • 1/3 cup granulated sugar, more or less to taste
  • salt to taste
  • pepper to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 3 quart casserole dish with cooking oil.
  3. In a small saucepan over medium heat cook and stir the vinegar and sugar just until the sugar dissolves then remove from the heat. 
  4. Place the sliced potatoes, green onions, bacon, salt and pepper into the dish and toss.
  5. Pour the liquid over top and toss well, coating all of the potatoes with the liquid.
  6. Cover and bake for 1 hour or until the potatoes are tender. Toss gently after 30 minutes. Serve immediately.

Adjust the vinegar sugar ratio to your own liking. We like it this way but you may like to use more or less sugar. Start with 1/4 cup of sugar and taste it once it dissolves with the vinegar. Then add more sugar if it is too vinegary. Do not decrease the vinegar though.

  1. My kids love German Potato salad. My DIL’s parents make it. I have never been a big fan, perhaps because vinegar is not something I like very much. I might try it the next time they come over for them though.

    • It is so good. Adjust the vinegar/sugar to your taste. It took us about 3 times to figure out we loved it made with 50/50 mixture the first time I made it years ago. I hope it brings back all those wonderful memories!

  2. So now I am hungry 😋 at midnight! Growing up, I didn’t have German potato 🥔 salad but it looks delicious!!! Have you ever tried traditional Irish potato salad? It is similar to other potato salads but you have cooked cabbage 🥬 in it as well. Or you can add other green cooked leafy vegetables like Kale. Another version of Irish ☘️ potato salad adds apples 🍏.
