Air Fryer Marinated Chicken Kabobs
Chicken marinated for one hour, layered with your favorite vegetables and cooked in the air fryer for about 15 minutes. Not only is this chicken delicious but super moist as well. I used my new Ninja Foodi skewer gadget and air fried mine. You can use any air fryer and do the same thing by laying them flat in the air fryer pan and turning them over half way through the cooking process.
In a small bowl whisk together the marinade
ingredients until the salt & sugar is dissolved, let cool.
Add the marinade to the chicken making
sure the chicken is completely covered.
Cover bowl and refrigerate for 60 minutes.
While the chicken marinates rinse,
pat dry and prepare the vegetables.
If using mushrooms pop the stem off.
Drain the chicken and discard the marinade.
Layer the chicken with the vegetables, ending with a
sturdy piece of vegetable which helps keep the food
on the skewer. If you are using wooden skewers, they
must be soaked for 30 minutes in water so they don’t burn.

If you are using a regular air fryer, lay the skewers
on the pan bottom and turn over halfway through the
cooking process. Preheat Air fryer to 390 degrees for
5 minutes and cook for about 15 – 20 minutes. The
chicken needs to be 165 degrees then it’s done!

Ingredients
- large thick chicken breasts, boneless, skinless & cut into chunks
- vegetables like mushrooms, peppers, red onion, zucchini, tomatoes etc.
Marinade Ingredients:
- 2 & 2/3 cups warm water
- 1½ Tbsp. kosher salt
- 1½ Tbsp. granulated sugar
- 2 Tbsp. soy sauce
- 2 tsp. olive oil
Directions
- In a small bowl combine the marinade ingredients, whisking until sugar and salt dissolves. Let cool.
- Add the chicken to a medium bowl and pour the marinade over the top. Stir making sure marinade covers the chicken. Cover the bowl and refrigerate for 60 minutes, stirring after 30 minutes.
- If you are using wooden skewers, soak them in water for at least 30 minutes so they don’t burn when you cook the kabobs.
- While the chicken marinates, rinse, pat dry and cut up your vegetables in about 1″ pieces. Leave cherry tomatoes whole and pop the stem off of the mushrooms.
- Preheat air fryer to 390 degrees for 5 minutes or more.
- Drain the chicken discarding the marinade.
- Layer the chicken chunks with the vegetables on each skewer ending with a sturdy vegetable to help hold everything on the skewer. I ended with my red onion.
- Lay the skewers flat on the bottom of the pan. Air fry at 390 degrees for 15 – 20 minutes or until the chicken is 165 degrees. Turn kabobs over halfway through cooking.

I am loving mine too! The success is checking the chicken temperature frequently. I started at 13 minutes then checked every 2 minutes from there until they were 165-170 degrees.

Yes as it is just hot air blowing but be careful they will be very hot when you remove them.

It looks like this method of cooking might help with the BBQ problem of some things getting overdone while others are underdone.

It really did. Usually the bottom ones take longer but these were all the same temperature at the same time.

We often make our own chicken kebabs (I presume it’s the same as a kabob?) and we use the very same veggies and marinate as in your recipe … and then we put it on the open fire (of course, typical South African ☺️). Really tasty!

I bet it gives it a great taste on the open fire. In the summer we use the grill. It is a great gadget for the air fryer.
