Chicken Alphabet Soup

A simple and quick way to make Chicken Alphabet Soup using rotisserie chicken, pasta, carrots, onions and celery. We found Alphabet pasta in Amish country and I had to buy it because I haven’t had it since I was a kid. Since my grandkids are still sheltering in place with us, due to Covid, I thought it was the perfect time to make Alphabet Soup.

Ingredients

In a large pot over medium high heat, melt the butter and

add the diced vegetables. Sauté for about 5 minutes or

until the vegetables start to get tender, stirring frequently.

Add the chicken broth, salt, pepper and

poultry seasoning then bring to a boil.

Add the pasta and boil until desired doneness.

Remove from the heat and add the chicken.

Let sit covered for 10 minutes then serve.

  • 4 Tbsp. butter
  • 1 cup celery, diced
  • 1 medium onion, diced
  • 1 cup carrots, peeled and sliced
  • 12 cups chicken broth
  • 1/2 tsp pepper, or to taste
  • 1 Tbsp. salt, or to taste
  • 1/2 tsp. to 1 tsp. ground poultry seasoning (adjust to your own taste)
  • 1# alphabet pasta
  • 2 cups cooked rotisserie chicken, cut into bitesize pieces

Directions

  1. In a large pot over medium high heat, melt the butter then add the prepared vegetables. Sauté for about 5 minutes until the vegetables start to get tender, stirring frequently.
  2. Add the chicken broth, salt, pepper and poultry seasoning then bring to a boil.
  3. Add the alphabet pasta and simmer until desired doneness then remove from the heat.
  4. Add the chicken, stir, cover and let sit for 10 minutes then serve.

  1. The ultimate comfort food! My husband and I came across a photo in his phone the other day. It was from March 2020 and our second granddaughter had just been born during COVID. We were eating chicken alphabet soup when we got a text from our son letting us know about her birth; we couldn’t see her for months because of the virus. The photo on my husband’s phone was the baby’s name spelled out using the letters from chicken alphabet soup: C O L E T T E 🌟 👶🏼 😷

  2. I love this recipe! 🤗 Yummy! FYI You can find the alphabet pasta in most grocery stores it is made by Ronzoni and it’s called Alphabets No. 51. Really looking forward to trying this and getting cozy with a book! Thank you so much! 🙋‍♀️💫✨
