Chicken Alphabet Soup
A simple and quick way to make Chicken Alphabet Soup using rotisserie chicken, pasta, carrots, onions and celery. We found Alphabet pasta in Amish country and I had to buy it because I haven’t had it since I was a kid. Since my grandkids are still sheltering in place with us, due to Covid, I thought it was the perfect time to make Alphabet Soup.
Ingredients
In a large pot over medium high heat, melt the butter and
add the diced vegetables. Sauté for about 5 minutes or
until the vegetables start to get tender, stirring frequently.
Add the chicken broth, salt, pepper and
poultry seasoning then bring to a boil.
Add the pasta and boil until desired doneness.
Remove from the heat and add the chicken.
Let sit covered for 10 minutes then serve.

Ingredients
- 4 Tbsp. butter
- 1 cup celery, diced
- 1 medium onion, diced
- 1 cup carrots, peeled and sliced
- 12 cups chicken broth
- 1/2 tsp pepper, or to taste
- 1 Tbsp. salt, or to taste
- 1/2 tsp. to 1 tsp. ground poultry seasoning (adjust to your own taste)
- 1# alphabet pasta
- 2 cups cooked rotisserie chicken, cut into bitesize pieces
Directions
- In a large pot over medium high heat, melt the butter then add the prepared vegetables. Sauté for about 5 minutes until the vegetables start to get tender, stirring frequently.
- Add the chicken broth, salt, pepper and poultry seasoning then bring to a boil.
- Add the alphabet pasta and simmer until desired doneness then remove from the heat.
- Add the chicken, stir, cover and let sit for 10 minutes then serve.

What a great childhood memory, though our alphabet soup came from Campbell’s… it was such fun to search for the letters!

You can use any pasta but the alphabets makes it fun.

The ultimate comfort food! My husband and I came across a photo in his phone the other day. It was from March 2020 and our second granddaughter had just been born during COVID. We were eating chicken alphabet soup when we got a text from our son letting us know about her birth; we couldn’t see her for months because of the virus. The photo on my husband’s phone was the baby’s name spelled out using the letters from chicken alphabet soup: C O L E T T E 🌟 👶🏼 😷

I love making homemade chicken noodle soup, but I never thought of adding poultry seasoning to the broth. I will add it to my soup next time. Happy New Year.😊👣

I love the flavor Georgetta but I use half of what other people use. Start with 1/2 tsp, taste it and see if you want more. Happy New Year!

Wonderful I’m glad you liked it. Another tip is use “Better Than Bouillon” in place of chicken broth unless you make your own. It is salty so don’t add any salt until you taste it. They make Beef, Chicken and Vegetable.

Thank you! I will get some today. I ended up giving the entire pot of soup to my youngest daughter. She contracted COVID-19. She has body aches, is tired and chills. So I sent the soup to her. She loved it, says it was the only thing she could eat.
