Zucchini Bread

I have made this delicious Zucchini Bread for decades. Nobody will believe it has zucchini in it. I usually make multiple loaves and freeze them for up to a year. This recipe makes two loaves.

    • Of course….hahahaha Two full size refrigerators with small freezers and a chest style freezer. I’m starting to panic because I have a side of beef coming in November and my big freezer is full!

  1. I love zucchini bread! It’s one of my mother’s signature items (along with pumpkin and poppy seed bread). Like you, she bakes a lot at once and freezes it for later, so she has bread at every family gathering.

  2. I had a co-worker years ago who had a huge garden and would bake zucchini bread and bring it in around this time of year – she remarked once “would you guys prefer this, or that I bring in a bag or two of zucchinis to pass around and you can take them home?” Zucchini bread won out as you might suspect.
