I’m going to make this💜
It reminded me of a broccoli, rice and cheese recipe that I make, in taste only. I actually thought it would be really good with rice added. I knew it was good when my husband went back for seconds.
Looks awesome
Thanks it turned out really delicious.
Yum yum yum😋😋😋😋
Thank you so much Shaheen!
This looks amazing! Saving this to try later.
Thank you and enjoy, we sure did!
Zucchini is one of those things. You either love it or hate it. We here love it! Try slicing it thin and frying in olive oil. Then pour it all over some good spaghetti or linguini. A true feast for the palate.
That sounds wonderful! Thank you for sharing. ❤
I love this kind of zucchini casserole and yours sounds like a delicious version.
Thank you it was very good.
I never added the ritz crackers! so interesting!!
It thickens it up a little and adds a wonderful flavor. Heck anything with Ritz has to be good.
Looks delicious. Must really be zucchini season over where you are. A casserole is not something I’d imagine zucchini making but it looks great!
It really did turn out great. Have you ever had zucchini bread?
Yes, they are delicious!
A great recipe. Today I used your recipe and made a delicious courgette dish. Thank you.
best regards
Thank you so much for letting me know! Enjoy the rest of the weekend!

Awww thanks Tony!!! I’m glad you’re back too! ❤
That looks quite good, and I’ve been craving some zucchini and/or squash…
I thought it was delicious. Even my husband went back for seconds! Thank you. 💗
Nice! We have been eating quite a bit of zucchini lately. Our favorite, although not fancy, is simply taking some sliced, well-seasoned zucchini and placing it on our Korean BBQ grill.
After several minutes on each side, you see the lovely char marks. These go perfectly with thinly sliced brisket or hotpot beef.
Oh my does that sound wonderful! Thanks for the inspiration!
This is one I am going to try out most definitely. it looks delicious and is simple. I cook for the family a couple of nights a week to help out and am always looking for tasty and easy to make.
As I was eating it Barb I was thinking of how good it would be to throw in some chicken and rice for a complete meal, although it could be a complete meal just like this too. We enjoyed it as a side dish and my hubby went back for seconds!
That looks awesome 😍
Thank you! ❤️
I’m actually going to try this. Thanks for sharing 😊
Yummy looking, especially after you add the Ritz crackers and cheese. Anything with cheese perks my ears up!

This looks like the perfect side for any meal!
Thank you so much❣️
I am always looking for good zucchini recipes . . . looks tasty!
Thank you I hope you enjoy it like I did.🥰
I am interested in anything that says “zucchini” and “casserole” in the same sentence! Thanks.
You’re welcome and I still can’t believe you get so many vegetables from containers, amazing!
Container gardening does work! We only had 4 zucchini plants come up and by now, I have about had it with zucchini. I don’t buy it after the local season ends so we eat a lot of it in a short length of time!.
That’s how I am too, had enough of it after they are done.
Hi Diane! I made this recipe last night. Really, really good! I thought I was DONE with zucchini until this morning and I found a good-sized one. Zucchini is like a bad dream sometimes. Anyway, I thought you might like to know that I did try the recipe and we liked it.
Thank you so much for letting me know. I thought it was nice to have a different way to cook zucchini. 💕
No kidding! Mashing it made all the difference.
