Easy Blueberry Crisp

I made this Blueberry Crisp with my homegrown blueberries. The bottom is a delicious blueberry mixture then it is topped with a crumb topping and baked in the oven. Serve warm with vanilla ice cream, optional, or serve at room temperature.

MAKE THE BLUEBERRY BOTTOM

In a medium bowl add the blueberries,

granulated sugar, 1 Tbsp. lemon juice

and 3 Tbsp. flour.

Toss well so all of the dry ingredients

cover the blueberries. Pour mixture

into a 2 quart casserole dish.

 

MAKE THE TOPPING

In a medium bowl add the butter,

brown sugar, oats, flour and cinnamon.

Using your fingers, mix

well until small balls form.

Pour evenly on top of the blueberries.

Bake uncovered in a preheated 375 degree

oven for 35 – 40 minutes or until the top is

golden brown and the fruit is bubbly.

Cool slightly and serve with

Ingredients

INGREDIENTS FOR THE BOTTOM

  • 5 cups blueberries, fresh or frozen
  • 2 Tbsp. granulated sugar
  • 3 Tbsp. all purpose flour
  • 1 Tbsp. lemon juice

INGREDIENTS FOR THE TOPPING

  • 1/4 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup all purpose flour
  • 3/4 cups quick cooking oats
  • 1/4 tsp cinnamon

Directions

  1. Preheat oven to 375 degrees.
  2. MAKE THE BOTTOM: In a medium bowl toss the blueberries, granulated sugar, lemon juice, and 3 Tbsp. flour. Pour into a 2 quart casserole dish.
  3. MAKE THE TOPPING: In a medium bowl add the butter, brown sugar, oats, flour and cinnamon. Using you fingers or a fork, mix well until small pea size balls form.
  4. Pour topping evenly over the blueberries.
  5. Bake uncovered for 35 – 40 minutes or until the topping is golden brown and the bottom is bubbly.
  6. Cool slightly and serve with or without vanilla ice cream on top. It was delicious at room temperature the next day too!

  3. Blueberries never survive long enough in this house to bake with them. But if I can sneak some in I’ll give it a try. Can you substitute granola for the oats?
