Three Cheese Ranch Chicken Casserole

Three types of cheese, chicken, bacon, broccoli and ranch dressing made this casserole moist and delicious. This is a low carb meal baked in one casserole dish that can even be made up ahead of time so that all you need to do is bake it when you get home.

Those of you that have followed me for a while know that I love to buy Sam’s Club rotisserie chicken. Not only is it cheap and delicious, but one chicken gives me 3-4 meals. We eat the dark meat and use the white breast meat for recipes like this one.

Because this casserole uses already cooked chicken and broccoli, you can put it together in a few minutes and it only takes about 15 minutes to bake.

Ingredients

In a large bowl add the chicken, broccoli,

bacon, garlic, ranch dressing and ½ cup of

each type of cheese. Carefully toss to combine.

Add pepper to taste and toss.

Spray a 9” x 13” casserole

dish with cooking oil.

Pour the mixture into

the casserole dish.

Top with the remaining

three kinds of cheese.

Bake in a preheated 375 degree oven

for 15 minutes. To get the cheese

golden brown on top, turn on the

broiler the last few minutes of baking.

Place in serving bowls and serve.

 

Three Cheese Ranch Chicken Casserole

Ingredients

  • 2 large rotisserie cooked chicken breasts, cubed (from one chicken)
  • ½ pound bacon, cooked and crumbled
  • 1 clove garlic, minced (I use the kind in the jar)
  • 4 cups broccoli florets, cooked
  • 1 cup sharp Provolone cheese, shredded (divided in half)
  • 1 cup Mozzarella cheese, shredded (divided in half)
  • 1 cup Cheddar cheese, shredded (divided in half)
  • 3/4 cup Ranch dressing
  • pepper to taste

Directions

  1. Preheat oven to 375 degrees.
  2. In a large bowl gently combine the chicken, bacon, garlic, broccoli, 1/2 cup of each kind of cheese, pepper and ranch dressing.
  3. Spray a 9″ x 13″ baking dish with cooking oil.
  4. Pour the chicken mixture into the baking dish.
  5. Top with remaining cheese.
  6. Bake for 15 minutes or until hot and the cheese melts. If you want a golden brown cheesy top, turn the oven to broil a few minutes before taking it out but watch it carefully so it doesn’t burn.
  7. Serve immediately. This was delicious the next day as leftovers too.

    • OH NO!!! Well for your information, you see what I make and I have lost 16#’s without hardly trying since November and that was with all the holidays! I eat everything you see. Maybe low fat cheese?

  1. Once again, I’m printing while commenting – THANKS! I like to get the rotisserie chicken too and use the white meats for casseroles, but I stopped because I am trying my best to cut out as many carbs as possible.

    • You are so funny!!! I hope you love this as much as we do. My hubby needs to watch his carbs and I am a carb-aholic! I am trying to make more meals like this or ones that he can avoid the carb if they are there. Thank you GP you always make me smile!

      • I am planning to make that chicken wing recipe, but with thighs – do you have any idea how long I should air fry them?

      • I have not tried thighs yet but from what I have read, 400 degrees for 15-20 minutes. That seems like it isn’t enough time to me. I would air fry for 15 minutes then check the temperature. I would air fry until the thighs are160 degrees, put the sauce on and continue to air fry until 165 degrees. Once you get the time down the first time it will be easy. Let me know how they turn out because I love the thighs!

  2. This looks really good Diane. I make a similar dish except it adds pasta. I like this as it is lower carb. I will pin it and give it a go when I am home and have the kids over.

    • Yes definitely low carb. I am trying to make more lower carb meals for my hubby. I can’t give up my carbs but I have eaten less with these tasty recipes. There is very few ways I like white meat but this was delicious and moist! Thank you Carla!

  3. That looks delicious – I love cheese. My mom used to make something called Chicken Parmesan for many years – it was a recipe modeled after the same dish at “The Pontchartrain Wine Cellars” in Detroit. It was their signature dish. They served it in individual crock pots as did she. You sneaked (snuck) a little broccoli in there I see. 🙂
