Caprese Tomatoes
Tomato with Basil & Mozzarella Cheese is an amazing combination. My husband and I usually like food fixed the same way but this is one we like differently. He likes this just like the picture shows, not cooked. Me on the other hand, I prefer mine cooked in the oven where the tomato is warm and the cheese is melted. So I will leave it up to you how you would like to fix yours. The recipe is the same either way other than mine goes into the oven. It’s even great drizzled with balsamic vinegar.

I wish I could eat more tomatoes! My stomach is usually pretty upset with me when I do but it doesn’t stop me from ingesting it! Lol

Awwww that is a shame! When our garden gives us tomatoes I eat them sliced with salt by the plate full. I never knew they would mess up a stomach! So sorry!

They look good Diane – my mom liked them like your husband, in fact she would take tomatoes and just slice them and put a 1/2 slice of Mozzarella, then a slice of tomato, then cheese, etc. and just drizzle Italian dressing over them. A quickie way to do it.

They are definitely best with fresh garden tomatoes. I don’t care what kind of tomato the stores sell, they are never tasty like home grown!

I’m with you Diane. I’ve done this before and my vote is absolutely that they are better heated! I usually use halved tomatoes, stuffed with pesto fresh breadcrumbs, and topped with the mozzarella. It’s the best!

I make this all summer when we head to the LakeHouse! Our fresh Basil and homegrown tomatoes! I like it both ways… but if it’s hot and humid… I like it cold. Yum! Happy Day to you!
