Cilantro Lime Rice
Rice cooked with lime juice and cilantro gave this 4 ingredient healthy side dish an amazing taste! Although I used Jasmine Rice with my dish, you can use any type of rice that is your favorite.
Ingredients
Cut the limes in half and squeeze
the juice from them.
Pour the lime juice into a
2 cup measuring cup.
Add enough water to equal 2 cups.
Pour the water with juice into a small pan
and bring to a boil over medium heat.
Once it boils add the rice and stir.
Add the cilantro and stir.
Cover and reduce heat to a low simmer
cooking for 15 minutes or until desired
tenderness then place in a bowl and serve.

We cook Jasmine rice with Coconut milk, but this sounds like a really good alternative for the warmer months… Yum!
What a great idea! I never thought of using coconut milk! Thank you!!!
Really? That surprises me. Yep! Coconut milk in lieu of water. Jasmine is our favorite rice too!
I like to make it with chicken or beef broth. Adds so much flavor as I’m sure the coconut milk does!
We always have this with our crock pot roast…
Nice combination!
Two things i would like with my rice as a flavour.
Tomorrow I will post what I did with it! Thanks!
Great

Never would have thought of pairing lime with rice – I’ve never had cilantro before.
I put cilantro in my homemade salsa. It tastes like parsley but a bit more harsher of a flavor.
I am impressed you make homemade salsa. I just bought some recently as I had not had it in years and was craving it.
That must be so fresh and tasty
Yes it was! The lime infuses into to rice making it so good. Thank you Nisha!

This sounds like an interesting recipe! We make lemon rice too but in a little different way by tempering oil with nuts and spices and adding lime juice to it before mixing into cooked rice 🙂 They both might taste different I guess.
