Cheesy Gnocchi & Italian Sausage
Wow was this one pan meal absolutely fantastic and I found myself wanting more the next day! If you have never tried Gnocchi, it is usually made from potatoes and it is a type of dumpling. Normally they are cooked in boiling water but with this recipe they are not. I made this with hot Italian sausage and it was amazing but you can also use mild sausage, whatever your prefer.

Ingredients
Add olive oil to an oven safe
frying pan (like cast iron) and
heat the pan over medium heat.
Add the gnocchi and stir frequently cooking
7-8 minutes until they start getting brown.
Remove the gnocchi from the pan.
Add the sausage to the same pan
cooking until no pink remains.
Preheat the broiler.
Add the diced tomatoes, garlic,
basil, oregano, salt and pepper
and bring to a simmer.
Return the gnocchi to the pan and mix.
Stir in the cream and cook until hot.
Top with the cheese.
Place the pan under the broiler for about
2 minutes, watching carefully, until the
cheese is melted and brown. Top with parsley.
Place in serving bowls and enjoy!

I love the change of not boiling it. I wasn’t sure I would like it fried but it turned out amazing!

I’m intrigued by frying them too, I occasionally overboil them if I’m not paying close enough attention and they end up kind of gummy. This sounds like the perfect alternative and they look so good in the pics. Im always so excited to try something after reading your blog!!

That is on my list! I even bought the board to roll them on. I have made pierogis and pot stickers so that’s next!

A board to roll them on? I just use a fork and the table or counter top.

It’s a small board with the lines indented in it. You just quickly roll the gnocchi across it. I love gadgets…lol

LOL We ate it at 6:30 pm and my husband goes to bed early. His comment was “Should I take my Tums now or after I eat?” Hahahaha I used “HOT” Italian Sausage.

That’s funny – he likely had a nightmare having hot Italian sausage and going to bed not long after. 🙂

With my DIL being half Italian, her kids love gnocchi and pasta. I think this would be an amazing meal with a salad to serve when this lockdown is over and they can come for dinner again. Thanks Diane.

Oh Carla what a nice day that will be, it can’t come soon enough. I bet your DIL could teach me a thing or two about cooking.

She is a great cook, but works such long hours, she doesn’t get much of a chance. Her parents bring them a meal once or twice a week to reheat as they can’t go over to eat right now. You know how Italian moms like to feed everyone. 😁😁
