Buttermilk Substitute
How many times do you want to make a recipe but it calls for Buttermilk and you don’t have any?
Don’t you hate it when the recipe only calls for a cup or less of Buttermilk and you have to buy a quart and you end up throwing the rest away?
This is a simple way to substitute regular milk for Buttermilk when you don’t have any and you don’t feel like running to the store. This recipe is just for cooking, not drinking.
Ingredients
Pour milk into a measuring cup and add the vinegar.
Stir and let sit for 5-10 minutes.
Use this in your recipe in equal amounts to the buttermilk quantity.

I never throw buttermilk away, it’s like yogurt, just keeps developing. I also use yogurt as a substitute for buttermilk.
OMG I use yogurt too! I love yogurt in my cornbread.
Me too – I also use yoghurt to replace sour cream in recipes. Delicious in Nigella’s chocolate guinness cake…
Have you ever made your own yogurt? I make mine in my dehydrator and it is so good!
Yes I have, but in the airing cupboard… and it was, erm, unusual!
Yay! Love it! Thanks for sharing!
You’re welcome!
I have to do this all the time💕 Always forget to buy the buttermilk 😬
And it works! Thanks!
I’m the exact same. Always using this 😂
Sounds simple enough
It is!
Useful to know.
Nice & easy, a wonderful tip !
Thanks!
I used yogurt in your rhubarb cake and it worked out great – good to know milk and vinegar works too.
Isn’t that the moistest cake? My favorite rhubarb recipe! Thanks for letting me know, I appreciate it!
Great tips thank you so much – I learn a lot from your blog:-)
Hearing that is exactly what makes it so worth it! Thank you!!!!
I do this all the time, but always used lemon juice, didn’t know vinegar would work. I used to waste so much buttermilk before I realized I could just do this on my own. This is a great share.
Thanks and yes either lemon juice or white vinegar will work.
Nice, will try this sometime!
Great tip. I’ll remember that for next time – and yes, there have many times, so I’m sure there’ll be, a next time.
Thanks Chris!
Good idea – and we just started buying buttermilk again – it is so delish (to me at least)
Yes it sure is!
Mmm and it is cool to know there is this substitution option for times we want that tang of buttermilk 😉
Not good to drink but works for baking!
Great tip..i will have to remember this…
It works great!
I learned this tip years ago. It can be a lifesaver, esp. if using a new recipe. However, I now use buttermilk in several dishes, so I make sure to put it to good use.
I use to buy it, use it and freeze the rest but this is easier. Thanks!
It’s good in a pinch, but buttermilk, if using a bit, is better to buy.
I use to buy it and freeze the leftovers but they got so old in the freezer I pitched it. I find this works great for my recipes. Thanks Lynn!
