Shoepeg Corn Dip
Shoepeg Corn Dip is a delicious dip served hot or cold. It is made with corn, butter, green chile peppers and cream cheese. You can serve it with Fritos, Scoops or Tortilla Chips. I love cream cheese and I love green chile peppers so I figured it will be pretty darn good and it was. My husband told me not to give him a lot and the man went back for seconds!
We eat Shoepeg Corn all the time with our meals with just a little butter added. If you have never tried Shoepeg Corn it is sweet, crunchy and it is our favorite canned corn.

Ingredients
In a medium saucepan over medium-low
heat, melt the butter and the cream cheese.
Add the corn and green chile peppers.
Stir and continue to heat until
all ingredients are hot.
Serve hot or cold with Fritos,
Tortilla Chips or Scoops.

- 2 – 11 oz cans Shoepeg Corn, (regular can corn can be used if you can’t find it)
- 8 oz cream cheese
- 1/2 cup butter, (1 stick)
- 4 oz can green chile peppers
Directions
- In a medium saucepan over medium-low heat, melt butter and cream cheese stirring frequently.
- Add corn and green chile peppers.
- Mix well to combine and continue to heat until hot.
- Serve hot or cold with Fritos, Tortilla Chips or Scoops.

Awe thank you KJ you are so kind! This can be made with jalapenos too but it is very hot. Most people prefer the green chile peppers. The green chile peppers give it a great taste without all the heat.
Finally picked up some green chile peppers and made this AMAZING dip! I loved it. I think I’ve found something new (other than my black-eyed pea salsa) to take to family gatherings!!

Looks like a great dip to serve at a barbecue and since it’s also good cold you can make & out it in the frig.
