Okra, Tomatoes, Corn & Bacon Recipe

This dish is delicous any time of the year because you use frozen okra. This is a simple and quick side dish to make with your meal. It is full of okra, corn, diced tomatoes, onion, seasonings and bacon. This could be made with fresh okra, fresh sweet corn and fresh tomatoes if you want, however, you will need to cook them a little longer.

Cook the bacon (save 1-2 Tbsp fat) and place the
bacon on a paper towel lined plate then set aside.
Crumble the bacon when cooler.

In a large frying pan cook the diced onion over
medium heat in 1 Tbsp bacon fat until tender.

Add all the rest of the ingredients except for the bacon.

Stir and cook over medium heat until it boils.
Turn to low and simmer with a lid for 6-8 minutes
or until the okra is tender.

Sprinkle with crumbled bacon, place in
a serving bowl and serve hot.

Ingredients
- 4 slices bacon (reserving 1 Tbsp the fat)
- 1 medium onion coarsely chopped
- 28 oz can diced tomatoes
- 2 – 15 oz cans corn, drained
- 2-1/2 cups frozen cut okra
- 1 tsp seasoned salt
- 1/4 tsp garlic powder
- 1/2 tsp hot pepper sauce, or to taste
Directions
- In a large skillet over medium heat, cook the bacon leaving 1-2 Tbsp grease in the skillet. Remove bacon to a paper towel covered plate. Crumble the bacon when cool.
- Add onion to the skillet and cook until tender.
- Add all the rest of the ingredients except for the bacon and mix well.
- Heat until boiling, turn to a simmer and cook 6-8 minutes covered or until okra is tender.
- Sprinkle with the bacon pieces and serve.

Looks great and as a southerner I can tell you it’s a tasty combination. I don’t have this often because I have a weakness for fried okra. However since I’m going to be adding more vegetables this year I’ll be having this more frequently.

In Diane’s Kitchen: She has a recipe for those of us who only eat breaded fried okra because we don’t like boiled okra. It is mouthwatering to look at. I’ve known of okra and tomatoes and eaten them on occasion but this is much fancier and I’m sure it will become a favorite of my husband’s. The added corn, bacon and hot pepper sauce are among the foods he loves.

Nice to meet another okra lover! Similar to a family favorite recipe (except these days I use liquid smoke instead of bacon). We always eat it over rice but it’s good over a piece of cornbread, too!

Okra isn’t something readily available here, although I have managed to find it frozen in an Indian supply store. I loved its texture. I’d love this dish of yours with some added hot chilli, and a nice Indian bread.

This is so ironic! I made something very similar to this. It doesn’t really have a name as it was my grandmother’s recipe. It turned out pretty well. I am going to try making this as well!
