Baked Chicken, Potatoes & Green Beans

Who doesn’t love a one dish meal for the entire family? I used our home grown green beans, that I froze last summer, in this easy recipe. Throw it all together into a 13” x 9” oven safe dish, bake it and dig in! Delicious Baked Chicken, Potatoes & Green Beans topped with butter, Lemon Pepper (or your favorite seasonings) and baked until the chicken is cooked through and the potatoes and green beans are tender. So easy and so good that my 3-year-old grandson had two plates!

Ingredients

Spray a 9” x 13” oven safe dish with cooking spray.

Peel and thinly slice the potatoes.

Lay them flat in the baking dish and season.

Top with thawed frozen green beans and season.

Place the cut up pieces of chicken on top of the green beans.

Place pats of butter all over the top and season.

Completely cover with foil sealing as tight as you can.

Bake at 350 degrees for 1 hour or until the chicken is no

longer pink and the potatoes and green beans are tender.

Ingredients

3 boneless, skinless chicken breast, cut into large pieces

3 medium potatoes, peeled and sliced thin

12 oz frozen green beans

Lemon pepper or your favorite herbs, lightly sprinkled on each layer

6 Tbl butter

Directions

Preheat oven to 350 degrees.

Spray a 9” x 13” baking dish with cooking spray.

Lay the potatoes flat on the bottom. Season with lemon pepper (or your favorite spices.)

Place green beans on top of the potatoes and season with lemon pepper.

Place chicken pieces on top of the green beans and season with lemon pepper.

Place pats of butter on top and cover tightly with foil.

Bake for 1 hour then check to make sure the chicken is no longer pink inside and the potatoes and green beans are tender. If not, stir and put back into the oven uncovered checking every five minutes.
