Chicken and Cheese Quesadillas
My daughter gave me this recipe to make for my grandchildren when they came over for the day. It is very kid friendly and they can add whatever they want to it once it is cooked or add nothing at all like my sweeties did. After making theirs, I went ahead and spiced it up and made myself one.
Lay a tortilla flat and add shredded cooked chicken to within an inch from the edge.
I will be using an quesadilla maker. If you do not have a quesadilla maker, only fill half the tortilla and fold it over the other half of the tortilla to enclose the chicken and cheese.
Sprinkle cheese over the chicken.
Top with another tortilla, or fold one tortilla in half if you don’t have a quesadilla maker.
I have a quesadilla maker and I placed the prepared quesadilla on it to cook.
If you don’t have one, cook in a pan instead.
When you close the lid it seals and sections off pieces of the quesadilla.
Remove from the quesadilla maker and using a large knife, cut into serving pieces.
Serve plain or with a dipping sauce.
Chicken and Cheese Quesadilla
2 large tortilla
1-2 cups cooked and shredded chicken
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
dipping sauce, optional we use taco sauce
Lay a large tortilla flat. Place shredded chicken on the tortilla to within 1” of the edge. If you don’t have a quesadilla maker, place chicken on half of the tortilla.
Sprikle both kinds of shredded cheese on top of chicken. Top with another tortilla if using the quesadilla maker. Fold in half if you are not. Cook until golden brown in the quesadilla maker or brown in a little oil in a frying pan over medium heat.
