Oven Roasted Chicken and Vegetables

I adapted this recipe from a Lipton Onion Soup envelope recipe. (www.liptonsoup.com) It is very healthy and delicious.

Ingredients

Peel and dice potatoes and carrots.

In a large bowl, combine chicken,

carrots, olive oil and potatoes.

Sprinkle on the envelope of Lipton Onion

Soup Mix and garlic powder.

Mix until combined.

Lightly spray a 9″ x 13″ baking

pan with cooking spray.

Pour chicken and veggies into the pan.

Sprinkle with dried thyme.

Bake at 450 degrees for 40-45 minutes or until

chicken is cooked through and veggies are

tender. Stir halfway through baking.

  • 4 chicken breasts, cut into large chunks
  • 4 medium potatoes
  • 4 medium carrots
  • 1/2 Β tsp garlic powder
  • 1/2 cup olive oil
  • 1 envelope Lipton Onion Soup Mix
  • 1/2 tsp dried thyme

Optional: Your favorite sauce or gravy can be drizzled on top

Directions

  1. Preheat oven to 450 degrees.
  2. Peel and dice carrots and potatoes.
  3. In a large bowl place chicken, potatoes, carrots and olive oil, mix well.
  4. Add garlic powder and Lipton Onion Soup Mix, stir well.
  5. Using cooking spray, lightly grease a 9″ x 13″ baking pan.
  6. Pour chicken and veggies into the pan. Sprinkle with thyme.
  7. Bake on the center rack for 40-45 minutes or until the chicken is cooked through and the veggies are tender. Stir halfway through cooking.

Optional: Drizzle your favorite sauce or gravy on top.

  1. We had a very fun day as the shops are unique, and I bought my first Christmas present. Your chicken looks like a very warm and homey dinner. Where did you find the energy to fix such a great dinner? I was tired but happy after our great day together.
