Oven Roasted Chicken and Vegetables
Today I spent the afternoon with my Aunt and cousin. We went to a quiet little town for lunch and shopping at unique little shops. This entire town was filled with beautiful flowers that are taken care of completely by volunteers. It was a very nice day with great company.
When I got home I had no idea what I was going to make for supper. I had a bag of fresh okra from our garden so I fixed it in the oven (recipe is in the vegetable category) and we ate it as an appetizer.
Meanwhile, I threw this Oven Roasted Chicken and Vegetables together. I adapted this recipe from a Lipton Onion Soup envelope recipe. (www.liptonsoup.com) It is very healthy and good, however, I don’t cook healthy too often. Although I adapted the recipe to my taste, I baked this the way the envelope said. The next time I fix it I will make a sauce or gravy to drizzle on top of it. I’m just a saucy kind of gal.
Ingredients
Peel and dice potatoes and carrots.
In a large bowl, combine chicken, carrots, olive oil and potatoes.
Sprinkle on the envelope of Lipton Onion Soup Mix and garlic powder.
Mix until combined.
Lightly spray a 9″ x 13″ baking pan with cooking spray.
Pour chicken and veggies into the pan. Sprinkle with dried thyme.
Bake at 450 degrees for 40-45 minutes or until chicken is cooked through and veggies are tender. Stir halfway through baking.

4 medium potatoes
4 medium carrots
1/2 tsp garlic powder
1/2 cup olive oil
1 envelope Lipton Onion Soup Mix
1/2 tsp dried thyme
optional: Your favorite sauce or gravy can be drizzled on top
Directions
Preheat oven to 450 degrees.

Bake on the center rack for 40-45 minutes or until the chicken is cooked through and the veggies are tender. Stir halfway through cooking.
Optional: Drizzle your favorite sauce or gravy on top.

We had a very fun day as the shops are unique, and I bought my first Christmas present. Your chicken looks like a very warm and homey dinner. Where did you find the energy to fix such a great dinner? I was tired but happy after our great day together.
