Cheesy Bacon Hasselback Potato
When I make these potatoes, I pop them in the microwave. It only takes about 8 minutes for two medium potatoes. They can also be baked in the oven for 40-60 minutes. You can add anything you like to these potatoes or change them up by using a different cheese like fresh parmesan or one of your favorites.
Wash your potatoes with a brush.
Place a wooden spoon next to the potato and slice the potato stopping at the handle of the spoon. That way you won’t cut all the way through the potato. You want the bottom of the potato to stay uncut.
Slice a pat of butter and cut it into four pieces.
Insert the small pieces into each section of the potato. Add a small piece of bacon to each section too.
Salt and pepper to taste.
Add a piece of green onion to each section.
Top with your favorite shredded cheese.
Microwave or bake potatoes in the oven and dig in!
Cheesy Bacon Hasselback Potatoes
2 medium potatoes
5-6 pats of butter
2 heaping Tbl cooked crumbled bacon pieces
salt and pepper to taste
1 green onion, sliced
1/2 cup shredded cheddar cheese
Clean potatoes scrubbing with a brush. Place a wooden spoon next to the potato and slice the potato stopping at the wooden spoon so you don’t cut all the way through the potato. Cut a pat of butter into four pieces. Place a little piece of butter in between each slice of potato. Place a piece of bacon and green onion slice on each side of the butter. Salt and pepper to taste. Top with shredded cheddar cheese. Microwave in a dish for about 8 minutes or until tender or bake in a dish in a pre heated 375 degrees oven for 40-60 minutes or until tender.
