Lemon Cookies

Do you like the flavor of lemon? I find it strange how I didn’t care for lemon when I was younger and now that I’m older I do. I wanted to create a recipe for a Lemon Cookie that you could really taste the lemon. So many times I have tried lemon baked food and you can barely taste the lemon. I didn’t expect this recipe to turn out so good on the first try but it definitely did! When I opened the oven door to take the cookies out, there was a wonderful fragrant lemon smell! They made the house smell so good. I was going to leave the cookie plain, however I thought I would experiment with a lemon glaze and see whether they were better with or without the glaze and the glaze wins! I just lightly drizzled the glazing over the cookies so they wouldn’t be so overwhelmed with lemon, if that’s possible.  Of course you can taste it for yourself but the recipe with the glaze gives the cookie an even more amazing lemon taste….delicious! These Lemon Cookies are now on my list as one of my favorite cookies!

Start by mixing the butter, cream cheese and sugar together. Add the egg and food coloring.

Add the vanilla extract, lemon peel and baking powder. Mix and add the flour a little at a time until combined. Place dough in a small bowl and cover with plastic wrap by laying it right on top of the dough leaving no air pockets.

Put the dough in the refrigerator for at least 4 hours or overnight. Remove from the refrigerator and roll dough into 1″ balls placing them on a cookie sheet lined with parchment paper.

Place in a preheated oven for 10-14 minutes or until the edges are slightly brown. Mine took 13 minutes but watch carefully as all ovens cook differently.

Let the cookies cool completely. Mix powdered sugar and lemon juice to a drizzle consistency. Drizzle over cooled cookies. Grab a cup of tea, a friend and enjoy!

Lemon Cookies

Ingredients

1 cup butter, softened

3 ounces cream cheese, softened

1 cup sugar

1 egg

8 drops yellow food coloring, optional

1 tsp lemon juice

1 Tbls vanilla extract

1 Tbls grated lemon peel

1 tsp baking powder

2-1/2 cups flour

FROSTING:

1 cup powdered sugar

lemon juice

6 drops yellow food coloring. optional

Directions

Preheat oven to 375 degrees. Place butter and cream cheese in a bowl and mix until combined. Add sugar and mix. Mix in egg and food coloring. Mix in the vanilla extract, lemon peel and baking powder. Add the flour a little at a time mixing until combined. Place dough in a small bowl and cover with plastic wrap, placing the plastic wrap right on top of the dough. Chill the dough for at least 4 hours or overnight. Remove from the refrigerator and roll into 1″ balls. Place on a cookie sheet lined with parchment paper. Bake for 10-14 minutes or until cookie is slightly brown on the edges and bottom. Watch carefully as all ovens cook differently. Let cool completely.
