Pasta With Chicken & Creamy Pesto

Last week I shared my Five Minute Nut Free Pesto recipe. I made chicken and pasta then added my homemade pesto with some added cream mixed in. This was such a delicious, easy and quick meal to make.

Cook the chicken in 2 Tbsp of butter with salt and pepper to taste or warm up some cooked rotisserie chicken.

Cook the pasta according to the package directions and drain.
Pour the drained pasta back into the pot.
Add the cooked chicken to the pot.
Whisk the pesto with cream then pour over the pasta.

Toss to combine the sauce with the pasta.
Simmer until everything is nice and hot then serve!

I like penne because iy is so easy to manage
I know! I use my fork and push it into the hole so I don’t drop it on my lap. Lol

Such a quick recipe, but with homemade pesto it’s definitely a dish full of flavour! This is one of our favourite dishes when we use our own pesto.

I made fettucine alfredo the other night and I had 3 pots going. Ack! I smelled like chicken afterwards. My sauce has made some improvement but it needs to get creamier. Any suggestions for that?

Is it possible you are cooking the sauce too hot, you don’t want to let it boil just simmer. Also, when I make it I whisk the sauce almost constantly. When you add your parmesan cheese at the end, stir just until melted and smooth. I hope this helps.
That’s a very good point. Yes, I’ve been boiling it. Next time I’ll let it simmer. Because it looks think. I also add cornstarch, but I think next time I need to mix the cornstarch with water before adding it to the heavy cream.

Yes pesto can be frozen for 6 months.

This is one of my favorite recipes. Well, not your recipe 🙁. Unfortunately I have only eaten this dish from the frozen food section of a grocery store. With that said, I know I would love the homemade version of this dish!!! You always have such great recipes.
