Mardi Gras Pizza

Pizza dough filled with Andouille sausage, pineapple, green pepper, tomato sauce and two kinds of cheese. To make this nice and spicy I use creole seasoning, andouille sausage and pepper jack cheese. Keep in mind, if you don’t like spicy use regular sausage and just mozzarella cheese.

Spray a cast iron pan, pizza pan or baking sheet with oil. If you use cast iron, put the skillet in a preheated 425º oven for 15 minutes.

Slice the andouille sausage and, over medium heat, brown in a skillet on both sides.

In a small bowl, combine tomato paste with creole seasoning.

Slice green pepper and onion.

Grate pepper jack cheese, whatever amount you think you will need, I grated about 2 cups.

Take the pizza dough out of the refrigerator and shape it on the counter. If using cast iron, carefully take the pan out of the oven and quickly lay the shaped dough into the pan. If using a baking sheet or pizza pan place the dough on them.

Bake the dough for 8 minutes. Remove from the oven and carefully spread the seasoned tomato paste on the crust. The skillet will be VERY hot!

Place the sliced andouille sausage and pineapple on the sauce.

Spread the pepper jack cheese on top.

Add the onion and green pepper slices.

Top with about 1 cup mozzarella cheese.

Bake for 8 minutes or until the crust is golden brown and the cheese is melted.

Slice and serve.

Ingredients

  • 1 – 13.8 oz can pizza dough
  • 1-2 tsp creole seasoning (more if you like it really spicy)
  • 6 oz tomato paste
  • 1 green pepper
  • 1 small onion
  • 6 oz andouille sausage 
  • 8 oz can pineapple tidbits, drained
  • Shredded pepper jack cheese (approximately 2 cups or whatever amount you want)
  • 1 cup shredded mozzarella cheese (or more for the topping)

    • I put a tablespoon of creole seasoning in and with the sausage and pepper jack cheese, it was over powered with heat. So I wrote the recipe up with just 1 teaspoon for next time as the pepper jack cheese added a LOT of heat too. We love spicy too if you can’t tell. 🤣

    • Carla you can still enjoy this without the heat and in any size sheet pan you want. Use your favorite sausage, cheddar or mozzarella cheese instead of pepper jack and whatever seasoning you love best. This was very spicy but I put too much creole seasoning in for us. I used 1 Tbsp and next time I will use 1 tsp and see if that’s not as hot. I used a lot of pepper jack cheese too which is hot. My recipe card reflects the change in the seasoning.

      • I do want to try using my cast iron pan to make pizza. I would definitely not put in the creole seasoning. I like pepper jack cheese but in small doses. I will have to try this with some changes for my palate.

  1. That’s different – wow – the Andouille sausage would make it spicy too … nice! Perfect for tomorrow too, since the Super Bown is being held in New Orleans.
