Broccoli, Rice & Cheese Casserole

I was given this recipe by my mother-in-law years ago. I have made a few minor adjustments and it is one of my favorite casseroles. This is a great potluck or family recipe, you can make it up ahead of time, refrigerate and pop it in the oven when you’re ready.

Cook the broccoli and rice according to package directions and let cool.

Melt butter in a saucepan and partially cook the onion and celery.

In a large bowl add all of the ingredients and stir well to combine.

Spray a 9” x 13” oven safe dish with cooking oil.

Pour mixture into the prepared dish.

Bake in a preheated 350º oven for 1 hour and stir.

Let sit for 5-10 minutes then serve.

Ingredients

  • 1# frozen broccoli
  • 1 cup uncooked rice
  • 1 stick butter
  • 3/4 cup diced celery 
  • 1 small diced onion
  • 1 – 15 oz jar Cheez Whiz
  • 2 – 10.5 oz cans of cream of mushroom soup

Directions

  1. Preheat oven to 350º.
  2. Spray a 9” x 13” oven safe casserole dish with cooking oil.
  3. Cook the broccoli and rice according to package directions and let cool.
  4. Melt the butter in a small saucepan over medium heat. Cook the onion and celery in the butter until partially tender, they will finish cooking in the oven. 
  5. In a large bowl stir all of the ingredients until well combined then pour into the casserole dish.
  6. Bake, uncovered, for 1 hour. Remove, stir and let sit for 5-10 minutes then serve.

    • I used to eat it every day for lunch, I love it! When I went to the doctor after some bloodwork the nurse told me she wish she had my blood. I swear it is better than any medicine! I made broccoli salad with supper today. Thank you Ab!

      • My doctor says I need to improve my cholesterol level. Probably more broccoli in my future. 😆

    • Haha You know me well. I make a meal out of my broccoli salad recipe too. It is raw broccoli, shredded cheddar cheese, bacon and my homemade sweet and sour dressing. Terry eats a small bowl and I devour the rest (not in one day). Thank you Linda!
