It’s Friday What’s For Dinner 08-11-23

Anyone that makes a homemade dinner is welcome to type the name of one recipe that you prepared in the comments, then we can all scroll through the comments for recipe ideas. This will be a weekly Friday post and only recipes on the Friday posts will be allowed.
If someone wants your recipe and asks, there will be no pressure to share it, it’s up to you. I will accept links, but only to the recipe and NO VIDEO. It may take me a day to approve it so I can make sure the link is legitimate and not spam.
NO SPAM OR VIDEOS WILL BE ALLOWED, ONLY RECIPES OR YOU WILL BE BLOCKED.
I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.

Okay. A little complicated, but great.
Mix together 16 ozs whole milk ricotta with some salt and pepper
cut two fresh zucchini on the diagonal
mix the zucchini with some EVOO and a pinch of salt in a large bowl
Grill the zucchini until tender and put it back into the bowl and toss
Coat an entire pita bread with the ricotta and top with the zucchini
Return that to the grill and let that toast until the bread is slightly crisp and the ricotta is warm
Remove and drizzle a little more olive oil, some lemon and honey over the top
EAT!!! And drink some nice light white wine with it.
What a clever new sandwich! Is this your invention, it sounds delicious. I doesn’t sound complicated, just more steps than the normal sandwich. What do you call this creation JC?

I’ve never had this. Do you think you could “grind” the ham in a food processor, Diane?

I’m experimenting with an idea of linguini assassina based on spaghetti assassina.
Spaghetti assassina is a fancy way to say you cook the spaghetti in the sauce.
I have tried this a few times, my grandson calls it Grandmas special spaghetti. Enjoy your special spaghetti too!
