Easy Baked Chicken Leg Quarters

This tasted even better than it looks! I have never put seasonings on this way before and I will do it this way from now on!

Rinse the chicken and pat dry with a paper towel.

In a small bowl add the oil, seasonings and combine making a wet rub. I have never used a wet rub before, I have always oiled the chicken and sprinkled on the spices!

Spray a baking pan, that has sides, with cooking oil.

Place the chicken on the prepared baking sheet, skin side up.

Rub the oil and seasoning mix on both sides of the chicken leg quarters. I rubbed some under the skin too.

Bake in a preheated 400º oven for 40-60 minutes or until the thickest part of the chicken is 165º – 175º. If you want the skin crispier once it is finished baking, put it under the broiler.

  • 4-5 chicken leg quarters (skin-on with bone)
  • 1 Tbsp. paprika 
  • 1 tsp. salt 
  • 1 tsp. garlic powder
  • 1 tsp. Italian seasoning
  • 3 Tbsp. olive oil
  • ½ tsp. chili powder
  • ½ tsp. black pepper

  1. Oh these look so good, Diane. I think chicken legs are so great – and filling. I like your choice of spices and rub!

    • The oil mixed with the seasoning made it taste so good. I have always oiled the chicken and sprinkled on the dry seasoning. That didn’t allow the full potential of the seasonings to come through. Thank you Kellye!

      • You and I often discuss leftovers (especially on sandwiches) … often it’s tastier the next day. I think of my mom with her stuffing sandwich … she have some meat on that sandwich too, but primarily stuffing. Usually chicken as a turkey was too big for just us, even when my father was still here. Terry is going to suspect you are trying to starve him by just making dark meat chicken. 🙂

    • I have never used a wet rub, never thought about it. My herbs used to be dry and not near as much flavor as doing it this way. I think the oil brings out the herb flavor, it was delicious!!!
