Tortellini, Sausage, Peas & Alfredo Sauce

Fixing a delicious homemade meal can’t be any quicker than this one! Cheese filled Tortellini, sausage, peas and Alfredo sauce makes this a meal anyone can prepare.

Boil the tortellini according to

the package directions then drain.

Return the tortellini to the same

pot and cover to keep warm.

In a large skillet over medium heat,

cook the sausage until no pink

remains then discard the fat.

Add the cooked peas to the tortellini.

Add the cooked sausage to the tortellini.

Add the Alfredo sauce to the tortellini

then toss gently but well. Cook a few

minutes, over medium heat, until hot.

Add to a bowl, top with grated

parmesan cheese and garnish

with sliced green onion.

Ingredients

  • 16 oz. cheese tortellini
  • 16 oz alfredo sauce
  • 1# Italian sausage (mild or hot)
  • 8 oz. frozen peas, cooked
  • grated parmesan cheese, to taste
  • 1 sliced green onion, for garnish (optional)

Directions

  1. Boil the tortellini according to the package directions then drain. Return the tortellini to the pot you cooked them in and cover to keep warm.
  2. In a large skillet over medium heat, cook the sausage until no pink remains then discard the fat.
  3. Add the cooked peas to the tortellini.
  4. Add the cooked sausage to the tortellini.
  5. Add the alfredo sauce to the tortellini and toss gently but well. Heat over medium heat a few minutes tossing constantly until hot.
  6. Place in a serving bowl, top with parmesan cheese and garnish with sliced green onion, then serve.

  3. As a kid, I used to help my grandfather make the tortellini by hand. Cutting and rolling, those were great days. Your recipe looks typically fantastic. Just the right mix of ingredients.

      • I’d like to get some – we used to get them before in the refrigerated section of the store, but now they have the refrigerated section in the middle of the pasta and pasta sauces aisle.

      • Don’t you hate when the change the store around. Sam’s Club does that and it is a huge store. You have to look everywhere and it makes me crazy. Lol

      • Yes I do – I shopped at a small store named Farmer Jacks for many years. It was the size of a regular Kroger. They closed suddenly in 2006 and I started going to Meijer which is huge like a Walmart. It was before I began my walking regimen and I’d go on a weekend, spending hours looking for a few items, going from one side of the store to the other. Meijer remodeled their store from May to November last year. By the time I get back there (last I was there was in November), I’ll never remember where things are.
