Creamy Cheesy Chicken Noodle Casserole

This is my new favorite Creamy Cheesy Chicken Noodle Casserole. It is made with noodles, chicken, mushrooms, a homemade cream sauce and topped with cheese then baked in the oven and it is so delicious.

Cook and drain the noodles.

In a large skillet over
medium heat, melt the butter.

Add the flour and whisk
quickly to combine.

Whisking constantly, cook
until a light brown.

Gradually add the chicken broth and
Half & Half whisking constantly
until hot, bubbly, smooth and creamy.

Add the salt and pepper then stir.

Add the mushrooms then stir.
Continue to cook until sauce
thickens, slightly, then
remove from the heat.

Spray a 3-quart casserole baking
dish with cooking oil.

Add the chicken to the noodles.

Pour the sauce on top
and toss to combine.

Pour into the prepared casserole dish.
I topped mine with more pepper
but this is optional.

Sprinkle the top evenly with the cheese.

Bake in a preheated 350-degree oven,
uncovered, for 30 minutes. Turn
on the broiler and broil until the
cheese turns brown.

Ingredients
- 8 oz. uncooked wide noodles
- 1/2 cup butter (1 stick)
- 1/3 cup all-purpose flour
- 1 – 14.5 oz. can chicken broth
- 1¼ cup Half & Half
- 1 tsp. salt
- 1/2 tsp. pepper
- 13 oz. canned mushrooms (stems and pieces)
- 1 large cooked chicken breast (I used a rotisserie chicken breast ) cut into bite sized pieces
- 1 cup shredded mozzarella cheese
Directions
- Preheat oven to 350 degrees.
- Cook the noodles according to the package directions, drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the flour and whisk quickly to combine. Continue to whisk about 30-60 seconds or until the butter starts to change in color.
- Gradually whisk in the chicken broth and Half & Half. Whisk constantly until smooth, creamy, hot and bubbly.
- Add salt and pepper then stir. Add the mushrooms, stir and continue to cook until the sauce starts to thicken then remove from the heat.
- Spray a 3-quart casserole dish with cooking oil.
- Combine the chicken and noodles.
- Pour the sauce over the noodles and toss to combine. Pour the mixture into the prepared casserole dish.
- Sprinkle the cheese on top.
- Bake, uncovered, for 30 minutes. Turn the broiler on and broil until the cheese turns a golden brown then serve.

What an eye Dorothy! My husband broke my 4 quart and I am still stewing over that. I bought a new 4 qt and the lid doesn’t fit tight and it’s just not the same. 😩
