Chocolate Butterball Cookies

This is one of my super easy new cookie recipes this year. The entire batch can be baked on one large baking sheet. They taste great whether you eat them plain or roll them in the cocoa powder mixed with powdered sugar. This is a very low sugar recipe especially if you eat them plain.

Using a large spoon cream the butter, 3/4
cup of powdered sugar and vanilla
together. Add the flour, salt and 1/4 cup
of cocoa stirring with the spoon
until combined. Mixture will be dry so
use your hands to finish combining.
The warmth of your hands will allow
the butter to absorb the dryness.

Roll the mixture into 1” balls, place them
on an ungreased baking sheet. Again, the
warmth from your hands will bind them
together. Bake in a preheated 325º oven,
on the center rack, for 17 minutes.

Remove the pan from the oven and let the
cookies sit on the pan for 1-2 minutes
then place the cookies on a rack to cool
completely.

Meanwhile combine 1 cup of powdered
sugar with the 2 Tbsp. of cocoa.

If there are lumps sift the mixture.

Roll the cookies into the sugar mixture or
leave them plain, either way is delicious.

Ingredients
- 1 cup (2 sticks) softened butter
- 3/4 cup powdered sugar
- 1 tsp. vanilla extract
- 2 cups all purpose flour
- 1/4 tsp salt
- 1/4 cup cocoa
TOPPING – Optional
- 1 cup powdered sugar
- 2 Tbsp. cocoa
Directions
- Preheat oven to 325 degrees.
- In a large bowl cream together the butter, 3/4 cup of powdered sugar and vanilla with a large spoon.
- Add the flour, salt and 1/4 cup of cocoa stirring until combined. Mixture may appear dry so if you use your hands and squish the dough, the warmth of your hands will help absorb the dryness.
- Roll the dough into 1″ balls and place them all on one, ungreased, large baking sheet keeping them from touching.
- Bake on the center rack for 17 minutes. Remove from the oven and keep them on the pan for 1-2 minutes until firm.
- Remove cookies to a cooling rack and cool completely.
- Meanwhile combine 1 cup of powdered sugar with 2 Tbsp. of cocoa, sifting if there are lumps.
- Roll the cooled cookies into the sugar mixture or eat plain.
Another great choice Diane. I make these as well, but I put chocolate chips in them, so yummy.
Do you use the mini chocolate chips or regular. With these only being 1” ball I would be afraid they would be overly wet with chocolate, oh wait that can’t be a bad thing. 🤣😂🤣
I used the mini ones. I agree, you can never have too much chocolate. 😂

Usually everyone puts plain powdered sugar on cookies like this. Adding the cocoa made them extra good. You could do half plain and half coated with the sugar.

Thanks for asking, Diane. My mom’s health has deteriorated quite a bit. I don’t mention her on my blog but it’s been part of what’s made the last while a very trying period. So many endless appointments and blood work. Long story short: muscle disease. This is why I’m gonna eat so much sweets and butterball cookies over the break. 😆 One step at a time is my motto these days. Then virtual schooling is rearing its ugly ahead after the break! 😭😭😭
On a brighter note, no work for the next two weeks and I intend to just relax before the marathon resumes.
