Ritz Meatloaf

This is not your typical meatloaf as this one is made with Ritz Crackers and cheese then topped off with a simple sauce. This is a moist meatloaf and it was a nice change from the regular meatloaf that I always make, it even got the hubby’s approval.

Whisk the egg with a fork.

Add the milk and whisk to combine.

Stir in the cracker crumbs.

Add the cheese and onion then stir to combine.

Salt and pepper to taste then stir.

Add the ground beef to the mixture.

Mix well with a large spoon or

by hand, mixture will be wet.

Spray a baking dish with cooking oil.

My dish is 8-1/2” long by 4-1/2” wide x 2-1/2” high.

Place the mixture into the baking dish.

Bake in a preheated 350º oven,

uncovered, for 40 minutes.

While the meatloaf is baking add the ketchup,

mustard and brown sugar to a small bowl.

Stir to combine and set aside.

Remove the meatloaf from the

oven and remove any excess grease.

Place the sauce on top of the meatloaf.

Bake for an additional 15 minutes, remove excess

grease and let it sit for 5 minutes then slice and serve.

Ingredients

  • 1# ground beef
  • 1 egg
  • 1/3 cup milk
  • 16 Ritz crackers, crushed fine
  • 1 small onion, diced small
  • 1/4 cup shredded American cheese (or cheddar)
  • 1/2 tsp. salt (or to taste)
  • 1/2 tsp. pepper (or to taste)
  • 1/4 cup ketchup
  • 1/4 cup brown sugar, packed
  • 1 tsp. mustard

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl whisk the egg then add the milk and whisk again. 
  3. Stir in the cracker crumbs until they are all wet.
  4. Add the cheese, onion, salt, pepper and stir.
  5. Add the ground beef and mix well with your hands or a large spoon, mixture will be very wet.
  6. Spray a baking dish with cooking oil, my baking dish is 8½” long by 4½” wide by 2-1/2” tall.
  7. Place the mixture into the prepared dish.
  8. Bake for 40 minutes, uncovered, then remove from the oven and drain any grease.
  9. While the meatloaf is baking in step 8, make the sauce by combining the ketchup, mustard and brown sugar in a small bowl.
  10. After you removed the excess grease in step 8, spoon the sauce on top of the meatloaf. 
  11. Bake for another 15 minutes, remove any excess grease then let it sit for 5 minutes.
  12. Slice and serve.

    • I grew up eating meatloaf sandwiches cold the next day. I think it tastes better cold. My husband loves to eat it the next day but not as a sandwich and not cold. One of the few foods we disagree on! Lol

  1. Sounds yummy. I love different recipes for meatloaf. For awhile I got into making one with sauteed bell peppers and onions, and included cheese, too. So hearty and comforting.

    • My husband would love that! I hate green peppers and he loves them so I never cook with them. I can’t even stand the smell. On the backside, he hates mushrooms and can’t stand the smell so I never put them in anything he’s eating. You could use your recipe and replace the bread crumbs with the crushed Ritz for a different taste too, just a thought.

      • Good idea. Just made your pizza bread again and used pesto, onions, bell pepper, mushrooms, spinach, Kalamata olives and feta. So yummy. I love that recipe.

      • Thanks! I was concerned you’d be offended that I share my ideas. I just made your apple pizza. I bake for only me, so I cut the recipe in half, put the crust in a 9 inch pie plate, added everything else plus pecans and didn’t add the caramel sauce. It was so yummy….tasted almost like pecan pie 🙂

      • Sometimes just the smallest swap makes a huge difference! I know my family always made a French Canadian meat pie at Christmas and mom always used saltines. I swapped out the same Ritz crackers, and it was absolutely delicious! Kind of a similar application as your meatloaf.

  2. Crackers were a favorite extender for my mother trying to feed 5 boys, a girl, and a manual laboring husband. Meatloaf was a typical dish for that treatment, but I also remember her soaking crackers in milk and adding them to scrambled eggs. It was actually quite good with fully cooked but moist results.

    • Wow that is one I never heard of before. I bet it tasted delicious! This isn’t related to Ritz crackers, but I loved when my neighbor made a dessert that had frosting. She always had leftover frosting and us kids sat at their table with saltine crackers and put that frosting on them, SO good!
