German Potato Salad
German Potato Salad has been a favorite of mine since I was a kid. It is made with sliced potatoes, bacon, green onions, a sweet & sour liquid and seasonings. Then it is baked in the oven and served hot.
Peel potatoes and slice about 1/4” thick.
In a small saucepan combine the vinegar and sugar.
Heat over medium heat just until the sugar
dissolves then remove from the heat.
Spray a 3 quart casserole dish with cooking oil.
Add the sliced potatoes, bacon,
green onions, salt and pepper.
Toss well.
Pour the liquid mixture over the potatoes and toss,
coating all of the potatoes with the liquid.
Cover with a lid and bake in a preheated 350 degree
oven for about one hour or until the potatoes are
tender, gently toss after 30 minutes of baking.

Ingredients
- 4 medium potatoes, peeled and sliced 1/4” thick
- 4 green onions, sliced
- 1 cup bacon, cooked and crumbled
- 1/3 cup vinegar, white or cider
- 1/3 cup granulated sugar, more or less to taste
- salt to taste
- pepper to taste
Directions
- Preheat oven to 350 degrees.
- Spray a 3 quart casserole dish with cooking oil.
- In a small saucepan over medium heat cook and stir the vinegar and sugar just until the sugar dissolves then remove from the heat.
- Place the sliced potatoes, green onions, bacon, salt and pepper into the dish and toss.
- Pour the liquid over top and toss well, coating all of the potatoes with the liquid.
- Cover and bake for 1 hour or until the potatoes are tender. Toss gently after 30 minutes. Serve immediately.
Adjust the vinegar sugar ratio to your own liking. We like it this way but you may like to use more or less sugar. Start with 1/4 cup of sugar and taste it once it dissolves with the vinegar. Then add more sugar if it is too vinegary. Do not decrease the vinegar though.

My kids love German Potato salad. My DIL’s parents make it. I have never been a big fan, perhaps because vinegar is not something I like very much. I might try it the next time they come over for them though.
Awe that is so sweet of you! You are such a good Mom Carla! 💐
I have that Italian/French combo in my sons in-laws so I have to up my game somedays. 😁💖
Oh my that’s a tough one but I’m sure you give them a run for their money! I bet you get some pretty good food at their house too!
I love when they invite me over for dinner.
I wish that would happen to me, I would love a break occasionally. For some reason, because I have a food blog, they think I am suppose to always entertain. My break is ordering pizza or my husband will cook for me 1-2 times a week to give me a break, love that man!
That’s too bad, both of them cook so they share the duties. You are lucky your hubbie likes to cook, mine would BBQ, but you know what that means…..
Oh yes!
Interesting version of potato salad
Thank you Sheree it is a nice change from our traditional potato salad.
Thanks a lot madam for sharing such a simple yet delectable recipe.Take care.
You’re welcome Francis! 🌷

Very easy and a nice change from potato salad made with mayo. You’re very welcome!
You had me at bacon! C
Oh yes and did you see how much is in there? Lol
Yummy!
Thank you Chantel! 🌺
Three ingredients – potato, green onion and bacon – that go so so well together! 😋
Bacon goes with everything! 🤣 Thanks💕
Oh yum Diana! Gosh, I’ve missed a lot of recipes!
Thank you Cindy! That’s the nice thing about scrolling. 🤣😂🤣 I am getting behind too and find myself having to catch up with other blogs. Have a fantastic week Cindy. ❤️
You’re welcome Diana.
I know life just flies by! Glad to be in touch with your recipes! You do the same!!! 💖
I’ve tasted this very same salad in Hanover in Germany for the first time … and loved it! I will use your recipe to bring back those great memories!
It is so good. Adjust the vinegar/sugar to your taste. It took us about 3 times to figure out we loved it made with 50/50 mixture the first time I made it years ago. I hope it brings back all those wonderful memories!
Looks absolutely delicious! I like the idea of potato salad without a creamy sauce. 😋
I am such a sucker for a sweet and sour sauce. What’s nice about this is you can make it as sweet or sour as you like. But then it’s full of bacon, what can be better…lol Thank you so much!
You’re very welcome! Bacon is always a winner. The combination of sweet and sour takes things to another delicious level. 😋
My mother still makes that – it was a recipe she inherited from her mother.
Me too! Always loved it as much as a kid as I do now.
Das looks gut 😁
Danke, it’s a favorite of ours!
You always go the extra mile Diane and it shows.
Awe thank you Linda! We were given about 20#’s of potatoes so I have been making a lot of potatoes for supper. Homemade fries tonight for supper.
Homemade fries sounds good – I’ll be right over. 🙂
You are always welcome!
Thank you – it’s be difficult to choose what meal to show up to! (Just kidding!)
Maybe one that hasn’t been eaten yet! Hahahaha
Ha ha – this is true!
So now I am hungry 😋 at midnight! Growing up, I didn’t have German potato 🥔 salad but it looks delicious!!! Have you ever tried traditional Irish potato salad? It is similar to other potato salads but you have cooked cabbage 🥬 in it as well. Or you can add other green cooked leafy vegetables like Kale. Another version of Irish ☘️ potato salad adds apples 🍏.
Oh wow! I have never heard of it before but now I am going to check it out. Thank you!
Tried and YUMMMMM
Awe thank you Barb! We love this so much.
looks delicious!!
Thanks!
This looks so good! Especially with the bacon.
Bacon is a must in this recipe. Thanks so much Michelle!
I don’t always think of hearty German food as elegant but you have certainly turned a rustic dish into a thing of beauty!
Wow you are so good for my ego! Lol Thank you for your kind words!
A nice variation!
Thank you my mother made it this way when I was a kid.
My German husband always laughs a little when I talk about German potato salad (meaning a potato salad served hot) He says, “All potato salad is German”.
Hahahaha he sounds like quite the character!
Oh, he really is!
This looks delicious I’m definately giving it a try!!!
Thank you and enjoy!!!!
I made this tonight and my husband and I really enjoyed it. Thanks for sharing the recipe. 🙂
Awesome and thank you for telling me. You’re welcome Lori!
Nice recipe looks yum and hope to try it soon!
I make this a lot. I always make extra and eat it cold the next day. Thank you Nisha!
