Taco Stuffed Tomatoes
What do you make when you pick tomatoes from your garden as large as your fists? Taco Stuffed Tomatoes made with cooked taco seasoned ground beef and topped with cheese, bacon, green onions and sour cream or add your own favorite toppings.
Ingredients
In a large skillet over medium heat, brown
the ground beef with the onion.
Drain any excess grease.
Add the taco seasoning and stir until
the ground beef is completely coated.
Add the water and taco sauce then stir well.
Add the tomato sauce, stirring to combine.
Cook until it bubbles then turn the burner
to low and simmer, uncovered, until thick
enough to spoon into the tomatoes.
Turn the tomatoes over, stem side down.
Cut each tomato into wedges, 3/4 of the way
through the tomato, leaving the stem end intact.
Fill each tomato with the taco seasoned ground beef.
Top with cheese.
Top with cooked bacon and any
of your favorite toppings.
Place a spoonful of sour cream on top
and garnish with sliced green onion.

Ingredients
- 1# ground beef
- 1.25 oz taco seasoning pouch, or 2 Tbsp.
- 1 medium onion or 2 Tbsp. Dehydrated onion
- 3/4 cup water
- 1/4 cup taco sauce
- 8 oz tomato sauce
- 2 cups shredded Mexican cheese
- 1/2# bacon, crumbled
- 2 green onion, sliced
- 1 cup sour cream
- 1 head Romaine lettuce
Directions
- In a large skillet over medium heat, cook the ground beef and onion until no longer pink, drain grease.
- Add the taco seasoning and stir until all of the ground beef is coated.
- Add the water and taco sauce, stir well.
- Stir in the tomato sauce. Cook, uncovered, until hot and bubbly then turn to low and simmer until thick enough to pick up with a spoon.
- Turn the tomatoes over, stem side down. Cut each tomato into wedges, 3/4 of the way through the tomato, leaving the stem end intact.
- Fill each tomato with the ground beef filling.
- Top with cheese, bacon, a spoonful of sour cream and garnish with sliced green onion.
- Serve immediately.

Awww thank you! You remind me of my parents. They just moved back home from Florida in May and every year they complained about the tomatoes in Florida. We have been giving them tomatoes, she just made jalapeño poppers with out jalapeños and of course they had sweet corn and melon. I think it made the transition back to Ohio a little easier..lol

Looks amazing. My grandfather use to make a “brown” spaghetti. He also use to put the spaghetti noodles in the sauce to cook rather than boiling the noodles separately. I wish I would have written down his recipe. Missing my grandfather. His name was Herbert.

I have to plan my meals before I make out the grocery list or I would never get what I need.
Yeah, my husband has been doing the shopping for about seven months now and he tends to get the same thing on his LIST. He has a list and he is not really keen on adjusting it. He just wants to run into the store and run out. So we have kind of been eating the same thing for seven months. I am ready to ask him if he would mind stepping into a different aisle. 🙂 When I did the shopping, I planned (loosely) so I would have what I wanted. But I also had a running “total” of what I had so I could change my mind when it came time to cook. 🙂
Hahaha we have to love our husbands! Mine buys the groceries too, he loves it! That’s because half the things that come home are for him. Lol
My husband started shopping when all the virus stuff started. He gets up at 5:30 and is at the store when the doors open. He just wants to get in and get out and not wander around the aisle looking for stuff. Also . . . in all fairness, I am very picky about food products and so unless I know EXACTLY what I want then it is difficult for me to tell him what to get. And somethings I buy are a toss up I got for the less expensive of the “better” product and he will NOT read ingredients. So . . . for the past seven months we just get the same ol’ thing. We are not starving . . . just not being able to be creative. At least if your husband buys what he wants he can’t say, “There is nothing to eat.”
Hahaha my grocery list is color coded for him. All veggies one color, all meds/pharmacy another color, cheese and milk/cold stuff another color….etc. Makes it easy for whatever section he’s in. I actually won a Roomba sweeper in a contest from Good Housekeeping with this color coded grocery list. I just use different colored high lighters. Even so, if he doesn’t find exactly what I want he calls me….3 times or more while he is shopping. It works out great and I really appreciate that he gets groceries. Happy wife, happy husbands tummy!
Well, when I know what I want and where it is, I could do something like that (except my husband’s list is on his phone). Sometimes I am actually needing to shop for stuff. When I try a new recipe sometimes the ingredients are not staples so I need to read and decide which one I want. And so unless I know exactly what I want I can’t tell him to get it. He is a “name brand” buyer and sometimes they are not always the best product.
One of the reasons I agreed to getting an iPhone (back in the day) is he USED to do the shopping, but as our lives changed I became the shopper. So I totally understand the husband calling thing. He is only doing the shopping because of the virus. He goes shopping at 5:30 in the morning (trying to beat the crowds) and I am sleeping so he is NOT going to call me. If I were up at that unGodly hour then I could do the shopping myself! He used to call me and send me pictures and we would decide. But when I am sleeping . . . no thanks. I love the color coded idea! It is awesome that you won a Roomba for it. That is an idea worthy of AT LEAST a Roomba!!! We (both my husband and I) tend to write our shopping lists in the order in which the item are in the store. It makes it easier.
We are a lot alike! My husband goes and is usually back before I get up. No way would I be up at 5:30 am either!!! I work on my blog until 2:00 am every day. Have a great weekend Terre!

I know they were gigantic! We grew Beef Steak and Celebrity tomatoes this year. It worked out great because the Beef Steak ripened first and then the Celebrity so were have a longer tomato season. We are still picking a grocery bag of produce every other day.
That’s amazing – I Googled “Celebrity” tomatoes and looks like they are heirloom tomatoes so they’re more durable and tastier as that type has been around awhile.
I hope you don’t get any frost/freeze in your area. We won’t right here in the metropolitan area, but the northern burbs may have frost/freeze issues Friday and Saturday nights. It gets warmer next week. I know I complained about the heat and humidity, but I’m not quite ready for sweatshirts, sweatpants and gloves yet.
We are too close to the lake to get frost thank goodness. I love fall and 68 degrees is perfect for me.
Thank goodness for that Diane. We are getting 38 in Wayne County but the other counties will get frost for sure.

These were gigantic, seriously as large if not larger than my fist. You wouldn’t have to use large ones, just make more medium sized ones. The key is that it is a delicious tasting tomato. Thank you!
