Wartime Iowa Pea Salad
This is a perfect salad for Thanksgiving! Iowa Pea Salad was a favorite during the wartime when food was being rationed. It is an inexpensive yet delicious way to use pasta, bacon, green onions, cheese and peas. Any type of sweet baby peas can be used in this recipe (canned, fresh or thawed frozen) but chances are, during the war, they used their own home canned or fresh peas.

Ingredients
In a large bowl add all of the ingredients.
You can’t see it but the pasta is on the bottom.
Gently toss trying not to squish the peas but
completely mixing the mayonnaise
into all of the ingredients.
Cover and refrigerate for at
least two hours then serve.

- 1 cup macaroni, cooked
- 1 cup mayonanaise
- 1/2 cup shredded cheddar cheese

YUM! This is a great combination of flavors. I have made “layered salad” using these ingredients with lettuce instead of pasta, which makes it work for the gluten-free crowd. π

This is an interesting twist on pea salad, which my brother loves. I’ll have to try it out at our next family potluck.
It tasted amazing. It calls for macaroni but I had exactly a cup of noodles leftover in my cupboard so I used that. I think the macaroni will look better but any pasta will work. Enjoy it will be a wonderful dish for a potluck.
