Microwave Okra
Our home grown Okra is ready to pick. A fellow blogger told me that he cooks his Okra this way so I had to try it. The biggest concern I had was that it had no slime after it was cooked. Ingredients
Slice the ends off of the okra and discard.
Slice the okra and place the pieces flat
onto a microwave safe plate.
Drizzle a little olive oil over the slices.
Toss until they soak up most of the oil.
Make sure the slices are separated
and flat then salt and pepper to taste.
Microwave for about 2 minutes or until
soft and no slime remains, then serve.
I cooked mine 2 minutes but my okra
was small and I didn’t have a lot of them
so yours may take a minute longer.

- 1 – 2 Tbsp. olive oil
- salt to taste
- pepper to taste
Directions
- Rinse and pat the okra dry then cut off both ends.
- Slice the okra 1/4″ thick and place on a microwave safe plate.
- Drizzle the okra slices with olive oil. Toss until the okra soaks up most of the oil.
- Salt and pepper to taste.
- Microwave for 2 – 3 minutes until the okra is cooked, soft and no slime remains then serve.

This is a keeper! I love okra but find it tedious to fry. My mother always said, “You can’t do anything else while you’re frying okra.” When I started cooking for myself I finally understood what she meant. It will burn in a heartbeat! Being able to “fry” it in the microwave sounds like a perfect solution. Thanks for sharing this recipe.

I’ve never tried okra, is it like beans?
Not at all and it is so hard to explain the taste. I think the best part for me is the large seeds inside. There is something about the texture, besides the great taste, that is so appealing to me. Usually the are breaded and fried. They are on buffets where I live a lot.

I just ate okra the other day too. I often boil it with little water, the other day my mom suggested to put a bow of unsliced okras into the rice cooker while rice was steaming. It was ok also. The only problem was that i let it cook a bit too long, it turned into a bit yellow shade.
What a great idea though! Maybe cook it separately next time?
I love to cook it with like 30ml water in a pot with the lid on, leave it a few minutes and when you think its done, open the lid the green will stay. Dont forget to throw a pinch of salt in before to enhance the taste.

Okra brings back memories of my dad making it despite my moms protests of it being slimy. My college roommate from Louisiana would fry it on occasion, stems and all, and it was delicious.
OMG your roommate didn’t eat the stems did they?
She and I both did. They tasted just the same as the rest of it. When you fry pretty much anything it tastes good! 🙂

Weird, I just made some for dinner; it was frozen from the store and placed them in a dish with water, no salt, pepper or oil and guess what, it had slime when I ate it. Tasted great bland. vw
OK so does that mean you liked them bland and with slime? If so you are a better lover of Okra than me…lol I am a salt addict but I think Okra is so tasty with just salt and pepper, however, never ever do I want them with slime again. 🤣😂🤣😂

The first time I made it I didn’t cook it right and it had slime. I thought that was the only way to eat it. Then I found a recipe that said no slime and now the only way I will make it is NO slime! lol
I don’t think I’ve ever had Okra.
It is more of a southern food but it is in most all of our restaurants where they bread and fry them.
Oh, the breaded and fried would be a treat for sure.

Oh yes that is definitely one of my favorite lunches that I make frequently. Taking a break from them this week because I had 2 grandkids last week and had to make 2 everyday for school lunches. I love to eat them but hate making them…..lol

I am not at all a fan of okra, it is one of the very, very few foods I do not like so I won’t be trying this but I have to say that as recipes go it just does not get much simpler. Whilst not my preferred veg. it is definitely my preferred mode of cooking! Five minutes start to finish.
I totally understand, I am like that with green pepper. I agree 5 minutes to cook food is perfect!
