Hearty Italian Tortellini Soup
This may look like a soup but it is a meal! It may be hot outside but we still have to eat and we had no problem eating this for supper. Full of Italian Sausage, Tortellini, herbs and plenty of veggies is what gave this soup one amazing taste.

Ingredients
Remove the sausage from the casing
and place the sausage into a large
Dutch oven pan, discarding the casing.
Cook over medium heat breaking
up the sausage as it cooks and
until it is completely cooked.
Remove the sausage to a plate.
Leave the grease in the pan.
Add the carrots, garlic
and onions to the pan.
Continue to cook over medium heat,
stirring frequently, until the onion is tender.
Add the cooked sausage and all of the rest
of the ingredients, except the tortellini,
to the pan. Bring to a boil then turn to a
simmer. Continue to simmer for
20 minutes with a lid.
Add the tortellini, stir and continue
to cook for 10 minutes more with the lid.
Place into serving bowls and enjoy!
Optional: Top with grated parmesan cheese.

Ingredients
- 1# hot Italian sausage links (mild can be used instead)
- 20 oz. cheese tortellini, uncooked
- 1 cup peeled & diced carrots
- 2 cloves garlic, diced
- 1 medium onion, diced
- 7 & 1/2 cups beef broth
- 1 – 14.5 oz can diced tomatoes
- 8 oz tomato sauce
- 1/2 Tbsp. packed freshly chopped basil (or 1/2 tsp dried)
- 1 tsp packed fresh oregano leaves (or 1/4 tsp dried)
- 3 Tbsp packed freshly chopped parsley (or 1 Tbsp dried)
- 2 cups fresh spinach, torn into small pieces and without the stems
- Parmesan cheese, optional
Directions
- Remove the sausage from the casing and place the sausage into a large Dutch oven pan, discarding the casing.
- Completely cook the sausage over medium heat, breaking up the sausage into small pieces as it cooks.
- Remove sausage from the pan and set aside, leaving the grease in the pan.
- Add the onion, garlic and carrots to the pan cooking until the onion is tender, stirring frequently.
- Add the sausage and the rest of the ingredients, except the tortellini, and bring to a boil. Turn to a simmer and simmer with a lid for 20 minutes.
- Add the tortellini, cover and simmer 10 more minutes.
- Place into the serving bowls and top with parmesan cheese, optional.

Exactly! Not just the table but having all of the family home at the same time to sit at the table. How times have changed. My grandkids think it is so cool to sit at our dining room table.
