Asparagus Soup
I know it is getting warmer outside and not really soup weather, however, this soup needs to be made when the asparagus grows in our garden………..when it’s free! It is the best tasting Asparagus Soup I have ever tasted and I make it every year. I tore this recipe out of a magazine years ago and have modified it into this recipe.

This sounds so good! Asparagus isn’t my husband’s favorite, I’m always trying to find different ways to prepare it so he’ll want to eat it, soup sounds perfect. I have a bunch in the fridge so maybe will be trying this one this week 🙂 Thank you!!

Keep I mind that it freezes very well! Just whisk as it reheats. I was still eating mine a year later and it was still delicious!

You should give it a try Sean! It is so creamy and delicious. It has a taste all it’s own with the potato and splash of cream. I have made this for years.
I also love potatoes and cream. Can’t go wrong!

Our asparagus is just coming into its own, and I plan to make soup later this week. I used it in a pasta dish last night. The best!
I don’t think there is a bad way to fix asparagus! I bet that was delicious in pasta!
We had it for lunch two days! A little oil, a little vinegar, and a sprinkle more of salt and we were all set!

I think it’s an acquired taste. I never liked it as a kid and love it now.
