Cucumbers with a delicious creamy filling and topped with tomato is what makes this the perfect appetizer. This is so simple to make but tastes like you spent a lot of time making them.

Oh yeah! We don’t even plant our garden for over a month away. Rhubarb and asparagus will be ready by first week in may though.

I’m not planting until June.. we just had a funky spring last year and I think the closer to summer I plant the better off I’ll be.

I recently just started appreciating cucumbers again for the first time in years! I was just planning my sister’s bridal shower today too, and I feel like these would be a perfect app! Thanks for sharing, Diane 🙂 Hope you have a great weekend!

Oh Mackenzie they would be perfect! If you have access to a large star cake decorating tip put the filling in a bag with the large star tip and pipe the filling into the cucumber for a really fancy look!

Well you went and got all fancy-schmancy on us … right now I am cold and seeing the cukes made me colder … they sure are fancier than just skinning them and slicing them onto a plate.

Haha I do that when we get them from the store and they have a slight bitter taste to them. Normally I sliced and salt them and that’s it but I can’t stand bitter cucumbers. So by making them this way you can’t taste the bitter and they are so good!

That’s clever and better than just plain.
