Cheesy Pasta Taco Casserole
I love pasta and I love tacos so I thought, why not combine the two? This is one of the tastiest casseroles I have ever created! I seasoned the ground beef with taco seasoning and combined it with the rest of the ingredients. Top it off with Mexican cheese that is melted under the broiler and garnished with fresh tomatoes, sliced olives and fresh parsley. Everyone cleans their plate every time I make this, even the grandkids!
Ingredients – Plus sliced black olives
and freshly diced tomato for garnish.
In a large pot boil pasta according
to package directions.
Drain and return to the
hot pot and keep warm.
In a large frying pan over medium
heat cook the onion and ground beef until
no pink remains and discard the grease.
Add the taco seasoning
and the salt then mix well.
Add the Rotel, taco sauce and
tomato sauce. Turn heat to a
simmer and simmer for five
minutes. Preheat the broiler.
Add the ground beef mixture to the pasta.
Toss mixing well.
Spray a 4 quart oven safe
dish with cooking oil.
Add the pasta mixture.
Top with the cheese.
Place under the broiler just
until the cheese melts.
Top with freshly diced tomato,
sliced black olives and fresh parsley.

Ingredients
- 1# penne pasta
- 1 tsp salt
- 1# ground beef
- 1 small onion, diced
- 2 Tbsp. taco seasoning
- 16 oz. tomato sauce
- 1 – 10 oz. can Rotel tomatoes (diced tomatoes with green chilis)
- 1/2 cup taco sauce
- 2 cups shredded Mexican cheese
- 6 black olives, sliced
- 1 small tomato, diced
- fresh parsley
Directions
- In a large pot boil the pasta according to the package directions.

- While the pasta is cooking, in a large frying pan over medium heat, cook the ground beef and onion until no longer pink then discard the grease.
- Add the salt and taco seasoning to the ground beef and mix well.
- Add the Rotel, tomato sauce, taco sauce and stir.
- Turn to a simmer and simmer for 5 minutes.
- Preheat the broiler.
- Add the ground beef mixture to the pasta and toss well.
- Spray a 4 quart oven safe dish with cooking oil.
- Pour the pasta mixture into the dish.
- Top with cheese and broil just until the cheese melts.
- Top off with a freshly diced tomato, sliced black olives and fresh parsley then serve.

I’m definitely going to try this! Looks delicious. I have one quick questions which will reveal my complete lack of culinary skills: When you add the taco seasoning, do you also add water as called for on the taco seasoning packet? Yep, complete novice here (Said with flushed cheeks and head held low. 😉 ).

No water, just seasoning. There should be 2 Tbsp taco seasoning in the pouch so just pour it on the hamburger and stir it in. The tomato sauce basically replaces the water. Not a dumb question!

Will let you know when We have tried it. Yesterday when searching for banana bread recipe came across blueberry dump cake. As I never seem to get around to eating my blueberries I gave it a go yum yum although a little sweet. I used up store of coconut flour & substituted butter with coconut oil & small amount of olive oil. I used Demerara sugar. I felt really pleased with myself and think the use of coconut flour & oil contributed to the sweetness. Maybe next time I would not add sugar. The dollop of cream on top was yum yum 🙂
